I'm old enough to remember seeing when Eric Clapton first did MTV Unplugged with "Layla" and "Tears in Heaven." Both of those songs are absolutely beautiful, the former because of how different it played out from its origins with Derek and the Dominos, and the latter because of the raw emotion Slowhand put into it.

Edit: Benjamin Gibbard's (singer from Death Cab for Cutie and Postal Service) solo stuff is pretty nice aswell.

Nirvana's Unplugged in New York album is a favorite of mine (even though Kurt used an acoustic-electric guitar for the performance).

Also, the Foo Fighters acoustic versions of Everlong and Times Like These are favorites, and I hope Dave Grohl does the same for My Hero in the near future.
