Series-Wheel of Time.
Stand alone novel-Frankenstein
The WoT books are worth it for Mat Cauthon alone.
Mat is an amazing character, but honestly my favorite character from any book is Min, from wheel of time.

The Wheel of Time. I have read a lot of books, but Wheel
of Time outshines the rest so much that they barely feel worth mentioning.

Wheel of Time - Robert Jordan
Mistborn trilogy - Brandon Sanderson
Elantris - Brandon Sanderson
Night Angel Trilogy - Brent Weeks
Trilogy of five - Douglas Adams
Ender series - Orson Scott Card
Bartimaeus series - Jonathan Stroud (The plot is not as important in here as the style and wit with which it is carried out)
Chaos Walking series - Patrick Ness
There are probably more but none that come to mind right now.
If wheel of time is that high on your list, I stongly suggest "Sword of Truth" series, by Terry goodkind. They have a similar flavor but I feel that SoT is significantly better.
My favorites:
Sword of Truth-Terry Goodkind
Wheel of Time-Robert Jordan
Atticus Kodiak-Greg Rucka
Deadline-Chris Crutcher
those four stand so far above the others that im hesitant to put them in the same post but, in no particular order:
Night Angle-Brent Weeks
Fahrenheit 451-Ray Bradbury
To Kill a Mockingbird-Harper Lee
The Drizzt Do'Urden series, before the "Hunter's Blade" trilogy
Hellgate: London Saga
Alpha and Omega-Patricia Briggs
Mercy Thompson-Patricia Briggs
anything by Chris Crutcher
the first 3 Artemis Fowl, as well as one of the later ones, 5 I think
Inheritance-Christopher Paolini
Fifth Ring-Mitchell Graham
Song of Ice and Fire-George R.R. Martin
Ranger's Apprentice-John Flanagan
Percy Jackson and The Olympians-Rick Riordan
I could name more, but my books aren't with me right now, these are just the ones I can remember.
