Stephen Speilberg
M. Night. Shamalon
Guy Ritchie
Quentin Tarantino
George A. Romero
Martin Scorsase
Francis Ford Copella
Simon Pegg
EDIT: Turns out Simon Pegg was just a writer, but still a good one so I'll leave him on that list.

I'm surprised no one mentioned Roman Polanski. He's a terrible person but he directed Chinatown and the Pianist.

I've only seen one of Akira Kurosawa works but I really liked it.

The Coen brothers have also been responsible for some great movies. I've always thought Fargo was overrated, but I really did like No Country for Old Men. On the lighter side, O Brother Where Art Thou, and the Big Lebowski (to a significantly lesser extent, but still) I thought were fun movies.
Ah, but how can you forget their ultimate masterpiece: The Hudsucker Proxy

If you haven't seen this yet, go watch it and be pleased.

SO to answer the question, these guys. For an underrated movie, try Miller's Crossing or Blood Simple. The first is a mob movie... but done by the Coen Brothers, meaning it's unusual, beautiful and bizarre. Blood Simple is an unusual thriller that feeds itself on misunderstandings... it relies on failure of communication to make it very tense, and does an amazing job at it.

I love them because no matter my mood they have something for it.
