Their point is that a remastering of a game (which is essentially just slapping higher resolution assets onto the existing models and ensuring the engine runs on the PS3) is infinitely easier and more cost effective than remaking Final Fantasy 7 from the ground up. Basically, FF7 would cost a fortune and a half to bring into the current (or next) generation, and it's unknown just how many sales of it there would be to offset the cost, much less make a profit. FFX, on the other hand, still looks decent enough that if they boost the resolution to 1080p and up the texture resolution a bit (and maybe use their HD models in all scenes), that's all they'll have to do. Relatively little cost, which makes the number of required purchases far less.
So to the OP, that's why they're opting for a simple, cheap remaster of a very popular installment of the franchise, instead of taking an indescribably massive risk with a remake of the also extremely popular FF7.
