I like the meta. It's a chance for them to satirize their own situation with humor.
I'm sure they've given their own opinions of what happened to Firefly but I wouldn't even know where to look to find their thoughts. I imagine it's something like "It sucked but we love our fans".
Yeah maybe, but this kind of thing can also easily turn into "we may be out of work actors, but look at these stupid nerds eh? lulz, nerds". Honestly, even if it is decent for a meta-commentary; pass.
I doubt that will be the case, given who the people involved are. They've frequently talked about the overwhelming support they get from the fans for the show, and how they appreciate it, and how much fun they had making the show. And having those fans then pay for a show that then turns around and mocks them for that same devotion...I dunno, that's a level of asshattery that I think is just not something those people would do. Will they probably make some jokes about the overall convention circuit experience? Sure, but hell, they do that stuff at the conventions all the time. Talking about the common silly/weird/fan obsessed stuff that they encounter at conventions. Hell sometimes the fans themselves flat out ask "What's the weirdest experience with a fan you've had at a convention like this." And those responses are some of the ones that get the best positive reaction from the crowd. Most con-goers are very self aware about their level of obsession and oddness, and it usually doesn't bother them. I'm confident that Tudyk will respect that trust of his fans, while also using them for a good laugh that every one can enjoy.

I personally look forward to the show, and expect it to be quite funny.

Am I the only one who's not getting why this is supposed to be meta? I mean, Alan Tudyk hasn't exactly been out of work since Firefly went of the air. He's been a steadily working actor who's appeared in a wide variety of roles, most of which bared little to no resemblance to Wash (case in point, see him in "42"). So now we're supposed to find the premise of him as a typecast former sci-fi star who can only survive on the convention circuit inherently funny? I'm just not seeing it.
Same here. Both Tudyk and Fillion have been in a ton of things since Firefly, and not just bit parts but major roles in big films and series. Frozen, Wreck-It Ralph, Monsters University, Guardians of the Galaxy, plus of course Suburgatory and Castle being TV series that have been far more successful and long-running than Firefly. They may find it amusing to play off the perception among some Firefly fans that they haven't done anything since then, but it's ridiculous to believe that that's actually in any way representative of their real lives.
