Hey!, I need a little PC advice. You see, I have literally hundreds of games and for me, it's quite easy to fill a 500 gb disk without much trouble. I use multiple disks on my PC, I use a 60 gb SSD for OS and 2 500gb disks for everything else (games).

I'm not worried about the SSD disk, since I only leave essential stuff on it (and I still have 33.3 gb of space left), but my question is, is it healthy for my other disks to fill them to the brim? or should I leave a certain amount of free space left on them?.

It's better to leave a few gb free for caching and so on, but that's more important on the SSD with the OS in your case. Incidentally, never defrag an SSD.

For your HDDs, try drive cleaning (either using the Windows utility or cCleaner) and then defragging to free up a little space, and then don't put anything more on them!
And in the long term it sounds like it might be worth investing in a larger drive - you can pick up multiple terabyte drives for fairly cheap now compared to even a few years ago. 2 or 3 terabyte ones seem to have the best price ratio.

Thanks for the help!, so I take it that, as long as the SSD has enough space (again, not a problem), there's no problem if I fill the other disks, right?, of course I need a bigger disk, but I don't have money to upgrade at the moment, so that's why I asked if there wasn't any problem filling them.

I'm a bit OCD concerning space on my disks and I've already followed lots and lots of suggestions to free up space on my SSD by disabling W7 stuff I don't need, like hibernation cache and such.

No problem!

It's best practice to leave a bit of space of HDDs as well for best performance (allows marginally more efficient allocation), but it isn't strictly necessary. You certainly won't do any actual harm by filling them completely, so if money's tight at the moment then go ahead.
And yeah, keeping space on the SSD for the OS is the more important bit. I'd aim to always leave at least 5-10gb free on C:, though I do err on the side of caution.
