I do like most of the boss battles from the God of War series. It was an interesting mesh of regular gameplay, light puzzle solving, and QTEs.

Also a few of the gimmick bosses from recent Legend of Zelda titles. The aforementioned Stallord especially.
I need to agree with you there. God of War had some fun bosses. Especially because they were ten times your size and you take them down with ease.

Favourite bosses for me are when you're fighting something that's just as good as you are, more or less.

Perfect examples that come to mind are The Emperess (first time) from Prince of Persia: Warrior Within. Other favourites include Shaak Ti from SW:TFU and Credo from Devil May Cry 4 (although I was disappointed with how easy it was to kill him second time around).

Say what you will about it, but over the years World of Warcraft has had some fantastic boss battles. Fights like Shade of Aran were extremely fun at the time. Hell, that one in particular even got it's own gregorian chant it was so memorable! Kael'Thas even blew up the room you were fighting in, very cinematic.

Now if only you didn't end up doing them dozens of times till the charm is gone and all you want to do it curl into a fetal position and cry after some idiotic pug moved during the Flame Wreath when all you want is your loots.

Chaos from Dissidia is an amazing boss fight thats fun and challenging. It's made of epic, and he's a tough one but not so tough he's cheap. And seeing him go Godzilla on your ass is epic to the Nth degree.
