Any Soulcalibur game. Just close your eyes and press buttons.
That reminds me of my cousins 9th birthday party. All his friends were playing Dead or Alive and eventually someone passed the controller to me and I asked, "What are the controls?" And the kid I was playing against said back to me, "I don't know, just press B really fast". I lost the match for not pressing B enough.

Guitar Hero... I fell asleep halfway through a song, woke up when the song ended and realized I managed to get 98% of the notes.

Also, the first level of Ikaruga. Played the demo so much I remember whats coming up and what I should do to kill it.

I used to with Ratchet & Clank: Up Your Arsenal, but it's been so long ago now, so I don't remember much.

The Legend of Zelda: Ocarina of Time. I've played through it at least seven times, so I know close to everything that's in the game, including secrets and Easter eggs.

For me it's Prince of Persia: Two Thrones. I think I beat that game about 15 times now, got the timing down perfectly for every single moment in the game, and I'm still not tired of it.

Wow... I really am old school. For me it's Contra.

I needed the 30 men code when I was a kid but played it at lunch every day throughout high school with a couple of friends who kept stealing my lives because once you run out you could press 'A' and take an extra life from your friend. I got so good at the game that 1 life was enough.

For those of you who don't know, if you wait till after the credits you start the game over again but your score and number of lives carry over. I would start with 3 lives, play through a few times and stop when I got to 20.

I used to have that with most Counterstrike maps, and I'm starting to get it with some TF2 maps. I remember smoke grenades having virtually no effect on me in Dust2 in CSS, I knew every nick and corner by heart and just popped some bullets in the most likely hiding places even when I couldn't actually see them. Got me some kills every now and then, and of course got called a cheater.

Ratchet and Clank 1.

I played that game until our controllers broke down from overuse.

Either OoT or the Elite 4 in Platinum. I've actually beaten one of the Elite 4 there with my eyes closed to see if I could (although it wasn't as good as if I had opened my eyes).
