Regarding the marketing behind Sonic (first video), Sonic looks like that because he was designed to be the anti Mario.

Mario is red, short, podgy, round, floaty in jumping, kills his enemies by flattening them
Sonic is blue, tall, sleek, sharp, and flings himself through the air, kills kis enemies by slicing through them.
