Mirror's Edge 2 would be great. The first game was, in my mind, an example of good idea but poor execution. Making it less linear and making the story better would make a great game.

Crackdown 3 (a real sequel this time).

System Shock 3.

Breath of Fire 5 (currently a dead series ).

a new Might and Magic (also a dead series).

Command and Conquer 5 or Red Alert 4.

A new Pokemon for the xbox360/ps3/pc with a lush world and beautiful modern graphics.

I can think of so many more; there are just so many ripe gaming opportunities waiting to be plucked.

Star Wars: TIE Fighter, without a shadow of a doubt. Sure, there are other games I'd buy and play, but TIE Fighter is probably the only one which can't be saited by the similar mechanics in existing games.
