I almost always do my first playthrough of a game on easy.
I do that with most rpgs. I give myself an easy game so I can concentrate on the story and then go back through for more challenging combat. That doesn't work with Demon's Souls, obviously.
Demon's Souls is a prime example of why every videogame should have multiple difficulty modes.

Fallout and Elderscrolls. I didn't really know anything on how to make my characters better, I just set the bar to easy and wenta' killin.

WoW you guys are soft :p
Easy? I don't remember.. Games I played when I was little? But then again I used a whole lot of cheats :p
Oh and the first playthrough of Devil May Cry 3, after getting used to the controls I beat the game on Heaven and Hell mode.

I can't remember the last time I played anything on easy. I tend to put everything on the hardest setting so it lasts longer.

erm

I tried Fallout Vegas on easy because I had lost my saved game files after a computer crash but it was so laughable I just put it back on very hard :/

In all seriousness, DMC3. Dear christ that game was tough.

I play Civilization games on easy.
I don't really care that much about winning quickly or competing with other countries, I just like to comfortably watch my empire engulf the world over and over again.

The last games I had played on easy are No More Heroes 1 and 2 and also Fire Emblem: Path of Radiances.

Not wanting to sound like I'm blowing my own horn, but I don't think I play any games under "Normal", and usually on "Hard".
That is pretty much what I do.

I like the challenge of doing harder, recently tried out Co-op of Splinter Cell: Conviction on Professional without never playing it before, was fun as hell :)

Sports games. I've moved up to pro on NHL 11 but for the longest time I was stuck on rookie. I like the game, I just suck at it.

The Witcher 2 on my first playthrough, it's rare that a game has gotten difficulty right. Often playing games on Hard still feels easy.

Dragon age origins. I found the gameplay an utter chore, and I simply wasn't willing to put in the work to learn to overcome the horrible repetitive battles. If there were a "skip all dungeons" option I'd have taken it in a heartbeat.

American McGee's Alice because I really didn't like it and just wanted to get through it so I didn't miss anything in Madness Returns.

All the Call of Duty's I've played because... Well, I'm just not very good at them.

EDIT:
Oh, and also Street Fighter Alpha 3 Max because saying the PSP's layout isn't friendly to Street Fighter controls is the understatement of the century.
Or I guess I could just suck at it. That's always a possibility.

Oh, I don't know. Watching my little dude get stomped is rather funny in a shouty, curse-laden, I'm-glad-my-mother-can't-see-me-now kind of way. I'm grateful for the bare-bones story, though. I'd hate to play something like a Bioware rpg with difficulty ramped up that high and no chance to lower it if I get stuck: "No, Morrigan. For the 30th time in a row, I don't have your mother's grimoire yet."

Only game that I ever started off on Easy was one of the Fire Emblem games. And that's it. For everything else, I play on hard or even harder difficulties that will make your momma think giving birth to a nuclear warhead wrapped in barbed-wire was easier.

Dragon Age: Origins. I just...had to. I would've played it on Normal if the friendly AI wouldn't be so thick. Yes guys, those jets of flame in your face do indeed come from that pressure plate your standing on. Yes get away from them. No don't walk over them again dammit!! Death ensues.
Would you be referring to that Blood Mage house in Denerim? That place always kicks my ass, and my party members walking on those plates doesn't help.

Fucking Far Cry I. My God... I love this game to no end, but it's just crazy unforgivable even on easy.

When I got to the Archdemon fight in DA: Origins I had to switch to Easy. It really pissed me off that I made it through the rest of the game all the way to the final boss battle without needing to, but...this fight just broke me man. Having to slowly wittle down that ridiculously big health bar whilst simultaneously fending off the perennially respawning horde. I just couldn't do it, I had to give in.
