Starfox 2. Phenomenal game, though the SNES hardware just isn't up to scratch.

Proper Silent Hill Collection with all of them (yes, also the crappy ones) and remake of the first.

It's too much to ask? Ok, I know it is...

I'd love this as well..

Final Fantasy VII (just update the graphics, don't touch ANYTHING else)
Final Fantasy XII
Metal Gear Solid
Resi 2-3 (so that we can have them the full trilogy like the awesome Resi 1 Gamecube remake)

Illusion of Gaia/Time and Tenchi Sozou/Terranigma

Either one of these games i think could seriously benefit from a modern HD facelift. The story lines are still relevant and interesting, and the soundtracks and atmosphere could be something very special on current gen visuals.
