Anyone else have a problem when, whenever they play a game genre, they tend to play one specific role really well (Mage in an RPG, for example), then at some point down the line find that they've completely lost the touch for it, but found that they're doing well in another role (Rogue in an RPG)?

I know exactly how you feel. I usually tend to go use a caster if I am first trying out a game. I just always have.

yeah when I played FFXI I did really good as a warrior tank than when I gained the ability to be a Paladin I couldn't tank very well anymore...

I remember in Section 8(It's a really obscure FPS), I would always play as a medic, and generally be credit to defense.

But I've pretty much switched over to an espionage playstyle that destroys the enemies' base from within.

I'm a bit more useful now.

Nope, once I learn how to do something hands on like that, it cannot be unlearned. But, if I don't use the knowledge for a long time, then it can start to seep away. Fortunately my habitual memory kicks in pretty quick, and I can pick it up again fairly fast.

Generally speaking - this reflects poor balancing on the part of the developers.

Some Examples

+In WoW as a ranged dps you can cause more damage from a safer distance, fight in more senarios, launches better ambushes, evade more danger than most tanks can take, and prolong a fight almost indefinitely if you need to buy breathing room for the healer.
+As a melee dps you can open the start menu, select "logout" and roll a ranged dps instead. (And before I start getting rogue-hate, a rogue is a ranged class where YOU are the bullets. Stealth-stun-stab-runaway-repeat. There's about as much actual "combat" as armwrestling your girlfriend)

+In Jade Empire, you had to pick the sword because the spear was completely useless and ONLY there to give variety to the enemies.

+In KOTOR, you had to be a Jedi Guardian because you only got half the force points of your other full-jedi party members.

You'd be suprised at how little it's actually your own personal faults/quirks that define playstyle in games like these.
