I've been thinking about this one, Escapist. What in your opinion is the song or songs that define a genre or subgenre, specifically your preferred one (though feel free to answer on any genre). My preferred genre (as any friends of mine will have gathered) is metal, and here's the two songs that I think define it as a whole. Well, its more accessible sides anyway (I wasn't about to pick a Sunn O))) song, was I?)
Fairly obvious choices, but still, iconic songs usually are the most fitting.

Back in Black by AC/DC defines something but I just can't figure out what precisely.
Oh wait, it defines they're back catalogue.

Ehm... I've always found Blind Guardians "Another Holy War" to be quite defining for Power Metal as it is nowadays.

In the Mood defines the Big Band era, even if many people (not me, by gum) consider it 'vanilla' and boring

Also, anything Bowie, including the Flight of the Conchords song

Kraftwerk - Robots defining the electronic music.

Skinny Puppy - Warlock is what industrial music is in its most raw form.

Joy Division - Love Will Tear Us Apart is the prime example of post-punk/new romantic

My favorite genre, melodic death metal, comes down to two forms: Swedish and Finnish.

This doesn't mean that the band themselves must come from either country, but it seems that mdm has evolved into mainly these two sounds:

I'd say that Green Day's 'Longview' was not only a genre-defining moment for stoner punk, it also sums up my generation to a T.
