I just passed Persona 3 this year and it's fantastic! Be warned, however, that any Persona game you play is a large time investment of maybe 100 hours or more. Less if you're really good at managing personas and social links and don't die a lot.

Katamari Damacy
Tales of the Abyss
Suikoden III

The ratchet & clank games
Mercenaries: Playground of destruction
Destroy all Humans 2
LOTR: ROTK
the GTA games, obviously
Prince Of Persia
the Star Wars Battlefront games
just a few i can think of, although these should keep you going for a bit. :)

Truth be told I could go on for days about the ups and downs of most of the games in the ps2 library the only games I can think of off the top of my head that haven't been mentioned are:
the .//hack series
dragon warrior VIII (also dragon warrior VII for the ps1 <3)
Oni (though you may hate the controls)
Spiderman 2
and Tokobots plus: mysteries of the karakuri

and also to exeplify the awsomeness of some that have been mentioned
Beyond Good and Evil
Dark Cloud
Jak and Daxter series
Kingdom Hearts series (I've replayed some of them over 3 times)
Ratchet and Clank series
Rogue Galaxies
and Shadow of the Colossus

Brace yourself:

Gregory Horror Show
Shadow of Rome
Shadow of Memories
Dragon Quest: Journey of the Cursed King
SWAT: Global Strike Team
Rogue Trooper
Psi-Ops
God Hand
ICO
Darkwatch
Maximo
Maximo Vs. The Army of Zin
The Mark of Kri
Sly Raccoon Trilogy
Silent Hill 2
Freak Out
War of The Monsters
The Getaway
Lots of games I haven't heard of. I was considering God Hand but I know nothing about it. I've just heard I should get it.
"I'm going to beat you senseless until you can man the fuck up and do something about it"

That's pretty much God Hand in a nutshell. Has one of the strongest fighting components on the PS2 to boot.

Definitely worth a look if your reflexes are up to the task.

Well, judging from my previous track records on these things, it's probably going to take me over 200 hours.

Oh... Is it a fighting game? I'm not a huge fan of those. In there defense, it's only cause i'm really bad at them... Really, really bad.

No, it's an arcade-style brawler. Think The Warriors more than Street Fighter.

Grim Grimoire, odensphere.... persona 3 and 4.... and breath of fire dragon quarter
Grim Grimoire was meh. Not terrible, but about as good as a console RTS can be.
Odin Sphere was excellent.
P3 & P4 also good.

BoF: Dragon Quarter is the second worst JRPG of all time (better than Thousand Arms, but just barely).

OP: Ignore Bof: Dragon Quarter! You'll thank yourself if you do.
grim grimoire was a decent rts with a fantastic story, one of the best game stories around

and your sooooo effin wrong about dragon quarter, its one of those majorly under appreciated gems of an rpg, its got an interesting story with not horrible writing and a fantastic sound track along with good game play and a very interesting fuck the boss mechanic

To each his own.
But I hated running around with party members at 1 HP for lack of Inns and healing potions. Made the experience rather unpleasant. Thankfully, it was a rental and it was returned rather quickly.

BoF 3 & 4 were much better games (though on PS1).
thats why you stock up on them
