I can play with 2-3~ players, is fairly simple, co-op, for Mac or PC, and loads of fun.

Here is the deal, my brother, his girlfriend and I are looking for a game to have LAN parties with, but haven't had any luck finding anything decent, can anyone give me a recommendation?

My brother's girlfriend is terrible at FPS, and we have decided a platformer would be ideal (something like Trine, perhaps), but not necessary.

She has very very poor reaction time/hand eye coordination when it comes to aiming >.<

Diablo 2 has been burnt out for a while with us actually, awesome game though

Edit-Regardless of her skill, she'll cope, give me titles!

Well, it's not LAN, but I've had a whole heap of fun playing Heroes of Might and Magic III via the Hotseat multiplayer option with my best mate and his girlfriend. It's a little lame and dated, but provided it isn't taken too seriously and you're all willing to have a laugh when one of your best heroes gets butchered by a horde of Minotaur Kings, it can be really fun.

You could download modular combat and make her a tank character. It won't matter if she can shoot. One of these tanks can take like eight AR2 auxiliaries. They're game breakers because they just need to move slowly towards you. Doesn't have LAN though, unless you make a server, but then you'll be fighting a tank, and if you make an anti-tank you aren't being fair.

Any RTS will do, but it sounds like she wouldn't like those. You could make a platformer with some weird level creator tool.

L4d/ LfD2 makes the most sense to me: the ultimate co-op game, and your girlfriend can just take a shotgun and flail.

Platformer on the PC? You'd pretty much be out of luck in that area; but a multiplayer platformer?

You're fucked my friend.

Maybe you should try an RTS instead. Any of the Command and Conquer games, Supreme Commander, Starcraft, etc.

An older game called Flatout was really fun when we used to play it over LAN at uni, drving game with destruction derby thrown in for good measure

How about Borderlands. I didn't find aiming being that hard or necesary in that game. One of the better co op games I have played, despite its many flaws.
