After going through all the greats, I am now sad to realize that there is nothing left to really look forward to. All the new shows look miserable and Im scraping the bottom of the barrel, so I am posting to ask if anyone has any suggestions.

I am open to most things, however I would like for fan service to be at a minimum if possible, Shounen is out of the question. I'd really like it to have good characterization.

Here is a list of the anime I have watched and enjoyed:
Evangelion
Ghost in the Shell
Wolf Brigade
FLCL
Baccano
Durarara
All the Miazaki movies cept for grave of the fireflies(I don't want to go into a week long depression)
Angel Beats
Cowboy Bebop
Samurai Chomploo
Death Note
Summer Wars
Paprika
Beck: MCS
Gurren Laggan
Fullmetal Alchemist
Mushi-Shi

Afro Samurai is quite enjoyable if you're up for a gritty story based in techno-Feudal japan about...well a motherfuckin' Afro Samurai!

Did I mention Samuel L. Jackson voices the hero and his associate?

Already seen that one, great animation, not much else going for it though. Thanks for the suggestion anyways.

You'd like Naruto

I'm hardly versed in anime, but both the manga and anime of Trigun are worth your time. Soul Eater gets a recommendation too, though I don't know if it counts as shonen.

Also, there's an anime called Monster that follows a German doctor. It is amazing.

[HEADING=2]Katanagatari[/HEADING]
50 minute episodes, very story driven and I mean very. It translates to "Sword Story" and is about a lady (less details to prevent plot spoilers) seeking to attain 12 cursed swords for the shogunate (Equivilent of emperor), but she herself is too weak and needs a body guard. This is their adventure.

[HEADING=2]Deadman Wonderland[/HEADING]
[
Also very story driven, the anime gets darker and darker the more you watch and the more you find out. It's about a boy who after an "incident" finds himself framed for several accounts of murder and is sent to Deadman Wonderland, a theme park refurbished into a prison.

[HEADING=2]Puella Madoka Magi[/HEADING]
[
Watch till episode 3 before deciding it's not your thing. That's when the "shit hits the fan" as it were and you realise the show isn't what you thought it would be.

Shonen doesn't imply that the charaterization is bad. There are good shonen series; for example...

Death note is shonen. It was published in shonen jump magazine. Shonen can be good.

OT: Puella Magi Madoka Magica. I cannot recommend it highly enough. The first two episodes are kinda slow, but then it moves at a breakneck speed.

Serial Experiments lain. A great psychological anime. If you liked evangelion's psych, you'll like this.

Steins;gate. If you like time travel sci-fi, you'll like this.

And when in doubt, check out the top 10/50/100/500, etc. list on the anime news network.

Soul Eater was kinda fun, Phantom: Requiem for the Phantom was also pretty good, and I'm watching Elfen Lied right now, as well as old episodes of Case Closed.

I know you said minimal fanservice, but one show I enjoy that tends to be mostly fanservice, almost to the point of parody, is Sekirei. It's a harem comedy, and those generally crack me up.

Having just watched Code Geass, I'd have to recommend it. It's like Death Note in that there's a student who gains a unique power and uses it to change the world. The difference is, I actually liked the second season of Code Geass and thought the ending was amazing.

The ending that would realistically plunge the world into a global power struggle and leave it far worse off than before? I enjoyed the first season for how cynical it could get. Even with the noble intentions of the Black Knights, they were still manipulating drug cartels and blackmailing people, showing that their morality was very mixed. The ending to R2 just felt like a damn copout after all that. (Not that it didn't have its own slew of problems already, starting with the first episode of the bloody season)

Some pretty good solid choices there, from that may I recommend...
Haibane Renmei--might be a little low on action for your tastes, but great story/characters
Outlaw Star
Irresponsible Captain Tylor--(often overlooked great, more comedic than most of the ones on your list
Vision of Escaflowne--Both the TV series & the movie.
Tsukikage Ran:Carried by the Wind
Melancholy of Suzumiya Haruhi
Our Home's Fox Deity
Full Metal Panic
Gunslinger Girl
Magic Knight Rayearth--(watch until the end of the first season, then you will both thank me and hate me)
Omoide Poro Poro (if you can get it)
Rail of the Star (if you can get it)

Oh, and a minor nitpick, Grave of the Fireflies actually isn't a Miyazaki film, its a Studio Ghibli film
(there are three Studio Ghibli films that Miyazaki had little/nothing to do with, Grave of the Fireflies,
Omoide Poro Poro and Rail of the Star.)

I'll leave it there, but even that's just the tip of the iceberg on the great anime you haven't
seen. It's a medium that a lot deeper than most people give it credit.

Oh and, you say Shounen is out of the question but a lot on your list that you like are actually Shounen.

Nah, there's tons of good shows out there. You've just got to hunt for them a bit.

Lately I've been getting the first two or so episodes of a bunch of different shows and just trying them out. If they're good, then great. If not, meh.

Here are some of the ones I've been watching lately:

'Bakuman' is awesome. Two seasons so far, the third is just starting to come out. It's a behind the scenes look at the manga industry. Tells the story of two guys who want to write/draw manga for a living - and the horrifying reality of realising their dream. Seriously though, it's kickass.

'Seirei no Moribito' - Story of a hardass female bodyguard who gets given a mission to guard a royal kid. Consistently quality script and acting. Good ending.

'Full-metal Alchemist: Brotherhood'. If you've only watched the original series, is it worth checking out Full Metal Alchemist: Brotherhood? This version follows the manga (the original anime went off in its own direction).

'Kekkaishi'. About 50 episodes or so. Well scripted, well acted story of a kid with mystical (Buddhist) powers who has to guard his home from an assortment of spiritual monsters. And try to win the girl next door who still treats him like he's five.

'Sergeant Frog' - Your mileage may vary, but I thought it was hilarious. Make sure you watch the dub, not the sub. The sub is okay, but the dub has a revamped script and is completely awesome. It's the story of a crack team of space frogs who completely fail to take over the Earth (the lead character just sits in his room watching TV and making Gundam models instead).

'Genshiken' - If you liked 'Welcome to the NHK' then you might like this one. It's the story (across 2 seasons) of a mismatched bunch of anime/gaming nerds who hang out together in a clubroom at their University.

'Hikaru no Go' - This one is weirdly addictive. It's about a kid who finds a ghost and starts playing an old man's board game called Go. It doesn't sound like much when you explain it like that, but once you start watching its hard to stop. The Ghost is so good at the game (he plays through the kid) that they kick the ass of everyone around them, eventually the kid gets pissed off with this and wants a go at playing it himself, starts getting involved, develops an incredibly intense rivalry with another kid...

'Major' - My God I love this one. It's a baseball anime. I don't normally go for baseball stories, but this was awesome. It follows a kid whose dream is to become a pro-baseballer. The best thing about it is that it doesn't end when he finishes high school (like too many do). It actually follows the guy into adulthood - you follow along as he tries to get his career started. Words can't even express how great this show is. If you like it, there's well over 100 episodes to sink your teeth into.

'Nodame Cantabile'. Not everyone will like this one. I nearly didn't watch it because of the base topic - Classical Music. I am so glad I watched the first episode (to try it out and see what I thought). One episode and I was hooked. It's about a smart, cynical cold-fish of a piano player whose life is invaded by the weird girl next door who never bathes, cleans her house or leaves him alone. One thing I really liked about it was that it showed a realistic portrayal of the industry the characters were involved in - the difficulty of finding a job when there are hardly any openings, of trying desperately to find a way of making money doing what you love instead of having to pimp out your soul at the nearest corporate office job.

'Twelve Kingdoms'. Again, not everyone is going to like this one. It's a decent size (about 45 eps from memory) and is a pretty epic story about the old trope of person from the modern world being transported into a fantasy world and told they're now the King. The great thing about it is that it takes that trope and applies some common sense. If you've been in charge of the kingdom for the last however-many-years and now some snot-nosed kid is in charge - you're hardly about to welcome them with open arms now are you? Hardly, you'll do everything in your power to screw them over instead. The only bad thing about this anime is the first 10 or so episodes. The main character starts out as a whiny little ***** - its only later that she starts to grow a pair. I'd recommend flicking as quickly as you can past the first 8 episodes - just get a bit of an idea as to what's going on. Maybe have it on 1.5x speed or something (or just have someone explain the basic plot to you/read a summary online. Once it gets to episodes 9 and 10 then you can actually start to watch the show.

Fate/Zero

The story of Fate/zero revolves around seven magi (Masters) and their associated familiars (called Servants) battling each other for an omnipotent wish-granting device called The Holy Grail. An event dubbed The Fourth Holy Grail War.

The series is heavily character orientated, focusing on their relationships and motivations for wanting the Grail. It's a diverse cast and every one of them is fully developed. The characters include: A mercenary hitman, a priest, a sociopath mass-murderer and many more.

But the presentation deserves a special mention as well. The whole production is movie quality. Fluid, fast action scenes and epic orchestras to accompany them, the final battle being one of the all-time bests. Even the pacing resembles a movie, going away with recaps and cutting down unnecessary padding (i.e all of it). It's a furiously fast ride from the start to finish, truly a joy to experience.

From your list I can see that quality is your thing, and you can't get much higher quality than Fate/Zero.

I posted this in the other anime rec thread so you may have seen it but I'll just copy paste it here anyway. It's a bunch of shows I almost never see people recommend here.

Accel World A good series based on a futuristic video game called The Accelerated World. It's pretty stylish all round.
Denpa Onna to Seishun Otoko - If you can figure out what the hell this show is about please let me know.
.Hack//Sign - Awful animation and production values and terrible pacing but a really good look at child abuse and how they escape from a harsh reality.
Denpa Teki na Kanojo - Watch this. This show is excellent and outstanding in every way possible, an absolute must-watch in my opinion.
Eve no Jikan Gekijouban - See above.
Mardock Scramble - Also see above.
Fate/Zero - This is the Nasuverse done right. Try your best to track down the BD subs for this if you can, it's simply stunning both visually and storywise.
Kara no Kyoukai - More excellent Nasuverse stuff.
Golden Boy - No need to analyze this. It speaks for itself.
Isekai no Seikishi Monogatari - Tenchi Muyo spinoff that's set in another world as the title implies. Yeah, this is a harem but it's great when a harem lead is not afraid of his own cock, he just has better things to do. Kinda gotta watch it to understand.
Magi- The Labyrinth of Magic - Pretty cool story set in a middle ages Arabian Nights setting where magical labyrinths appear around the world full of treasures and Djinn that would choose the next king.
Mouretsu Kaizoku - Also known as Bodacious Space Pirates. Don't expect One Piece, it's a show about strong and cute female characters and politics and insurance fraud. And a whole lot of Space Ship porn on the side. The soundtrack is also absolutely lovely.
Nazo no Kanojo X - It's honestly as weird as it sounds but it's a lovely story that's one of my all time favorites.
Shiki - Slow starter but an excellent vampire horror story set in modern Japan.
The Disappearance of Haruhi Suzumiya - Yeah, it sucks that the TV show has such an awful fanbase and the Endless Eight sucked too but this movie is an objective masterpiece. And I do not use that term lightly. Make Sure you watch at least episode 1-5 in chronological order, Bamboo Leaf Rhapsody and at least the first two and last episode of Endless Eight for maximum effect. This is a movie that actually managed to turn 5 minutes of deep introspection into one of the most tense and watchable scenes of all time.
Tasogare Otome X Amnesia - This is a pretty cool and interesting specimen. It's more or less a horror/romance story for girls but is extremely enjoyable nonetheless.

I think these fit your characterization requirement and are not mentioned above:
Azumanga Daioh - seinfeld as an anime
Magical Shopping Arcade Abenobashi

and then watch Rune Soldier and Cromartie High School
