So, the time has come when I feel the need to go through the list of anime that I have considered watching but haven't watched yet.
This is where you come in my fellow escapsits.
This is my list, help me sort through it. Which ones do you think I should watch first, last and not at all.

(In no particular order)
Azumanga Daioh
Umineko No Naku Koro Ni
Lucky Star
UFO Ultramaiden Valkyrie
DearS
Ao No Excorcist
Persona 4 animation
Cowboy Bebop
Welcome to the NHK
Golden Boy
Black Lagoon
Kore Wa Zombie Desuka
Working!!
Tatakau Shisho: The Book of Bantorra
Baka To Test To Shoukanju
Steins;Gate
Fate/Zero
Fate/Stay Night
Gunslinger Girl

Feel free to add any of your own recommendations to the list.

There's a handful of choices from this list that are a must watch for anyone into Anime. I'd say these 4 below are good choices to start off with:

Azumanga Daioh (Nice slice of life with some memorable characters)
Cowboy Bebop (A gem from the 90's and a truly spectacular western styled Anime)
Welcome To The NHK (Has an interesting premise and likable characters)
Black Lagoon (Great Gun Blazing Action and fun characters)

Although most of the choices on the list to choose from can be determined on what genres you prefer.

Classic that are atleast interesting to watch:
Azumanga Daioh (sort of the original slice of life)
Cowboy Bebop
Golden Boy
Welcome to the NHK

Shows that I consider to be incredibly well directed:
Steins;Gate
Black Lagoon
Gunslinger Girl

Persona 4 animation is essentially for those who've played the game. It's not bad, but it removes the emotional impact from some scenes.

Fate/Zero borders on "pretentious" (at least that's how I felt) at times but still includes some intriguing dialouge.

Hit or miss comedies:
Kore Wa Zombie Desuka (very reliant on gag humor, kind of dumb but still interesting)
Working!! (also reliant on gag humor, but abit smarter)
Baka To Test To Shoukanju (first season is enjoyable, second season overplays the same jokes again and again)
Lucky Star

Not necessary to watch at all (seriously, you can play/read the original works if you want, but they are polarizing):
Fate/Stay Night
Umineko No Naku Koro Ni

Haven't watched:
UFO Ultramaiden Valkyrie
DearS
Ao No Excorcist

Haven't watched but is considered highly recommended:
Tatakau Shisho: The Book of Bantorra

I haven't watched all of these anime but here's my opinion of the ones I have watched.

Umineko No Naku Koro Ni - This is quite a good anime. I preferred it's predecessor Higurashi no naku koro ni which I suggest watching first if you haven't already but I you don't have to since the plots are unrelated. There's a lot of gore in Umineko although a lot of it gets censored.

Cowboy Bebop - This was on my to watch list for a while and finally got round to it a few months ago and enjoyed it. It has some great fight scenes especially toward the end.

Kore Wa Zombie Desuka - Just recently finished season 1 and 2 and the OVAs of this and enjoyed it. It is really hilarious but it's an eechi anime (just to warn you incase you don't like pervy animes).

Baka To Test To Shoukanju - Watched a few episodes on the recommendation from a friend and loved what I've seen so far. I don't think an anime has made me laugh as much one has.

Fate/Stay Night - Watched this awhile back. I enjoyed it had nice amount of action, comedy and some romance, The ending made me quite sad when I finished it.

I've watched one episode of some of the other (black lagoon, gunslinger and lucky star). I didn't like lucky star from what I can remember the first episode was just the characters talking about food they like for most of it found it really boring, need to give it another shot. the other 2 seemed ok just haven't got back round to them yet.
I would recommend any I mentioned the above as all of the them are quite short( about 25 episodes think baka and test has two 25 episode seasons though) you could probably go through them quite fast.

Watch these, very well directed and includes the 'classic' anime of recent years.
Watch these as well, though they may be 'acquired' tastes, in some cases at least, though I believe they're good.
Don't bother watching these...
These are OK, so watch them or not... s'up to you.

As for my own recommendations...

Ergo Proxy, GitS:SAC, Last Exile, Witch-Hunter Robin, Usagi Drop, Hourou Musuko are the ones that come to mind now...

Welp, my very first recommendation is Steins;Gate. May take some time to grow on you, but once the plot kicked in, I was glued to the screen from beginning to end of every episode. Lovable characters, really. It was what inspired my username and avatar, but hey, each to their own.

Up next, Fate/Zero. There are some discussions whether to start with Stay Night or Zero. The Fate/ Stay Night anime is mediocre at best though, so I'd recommend you'd read the visual novel instead... if you're into that. The thing is, the two series spoil each other, but I'd recommend watching Fate/Zero anyway, it's infinitely more awesome than the Fate/Stay Night adaptation. Read up on the Nasuverse if you're too lost in the lore.

I'm currently running through Cowboy Bebop and am nearing the end. It's a blast.

As per my own recommendation: The Idolm@ster, one the most underrated (and entertaining) anime the year 2011 had to offer.

Also Bakemonogatari. Because SHAFT + Nisioisin = Absolute win.

If you want my opinion...

Watch:
Persona 4 animation
Cowboy Bebop
Black Lagoon
Steins;Gate

Maybe:
Welcome to the NHK
Working!!

Fuck the rest. It's all shit. I obviously don't know what you have watched but a good one that slipped by me quite some time is Xam'd: Of the lost memories. Kind of like a shorter, far higher quality version of Eureka 7 without all the surf culture (which kind of sucks but you can't win on everything).

Not exactly a anime master but here is my take on the ones I have watched

DearS - Ecchi anime, nothing special but enjoyable to watch at least for me.
Ao No Excorcist - Very good shounen anime, decent story enjoyable characters good visuals.
Cowboy Bebop - I pretty much consider this one of my must see animes
Black Lagoon - Good anime highly recommend it, interesting story good action
Fate/Stay Night - Decent anime, definatly not bad but nothing fantastic, I did enjoy it.
Gunslinger Girl - Really good anime with an interesting story and great animation

My own recommendations:
Isekai no Seikishi Monogatari - Shounen based action oriented anime with good animation and mix of fantasy/mecha.
Karin - romance comedy between a for once dependable male character and a young vampire who instead of sucking blood injects it.
Tiger & Bunny - Fun anime based around a Tv show that follows the exploits of a cities super heroes and rates them

I'll stop there cos I could go on for a while :p

I haven't seen many of the anime there but I would recommend Au no exorcist. I found it really enjoyable as well as Black lagoon.
