Also don't make her play portal unless shes interested in puzzles. If she wants any kind of action/story portal will bore her to tears
I don't you think you give people enough credit. Sure it will take some getting use to , but if she truely wants to learn, she will. Skyrim is far from rocket science, and no need to even finish the story! The world is expansive and dynamic enough to be interesting even if they get lost. Just put the game on easy and let loose. Even if she isn't "good" there are few consequences for dying. It'll give her the chance to get comfortable with the controlls.
