When the option is there, I tend to do it from long range. This gives me the ability to escape with ease and not have to worry about any hostiles (bodyguards, soldiers, etc) that were nearby.
If killing from a distance is not an option then it still needs to be stealthy and well thought out. I will check for escape routes and hostiles before I commit to anything.

In TF2, if I need to eliminate someone carrying the intel, running into them usually works.
...if you have a giant sword that shows you are obviously compensating for something and a shield that grants you superhuman speed, that is.
In Fallout: I just fire the trigger and let the Fat Man do the talking.

First of all you need a condom. You fill it with water and tie off the end. Freeze it and sharpen the tip. Stab the guy under the armpit, depending on the angle of insertion you should either penetrate the subclavian artery or axillary artery. I prefer to kill them with a silenced and scoped weapon from far away.
My fallback option is to just gut them quickly and quietly up close with a big knife.

maybe its because I've been playing assassin's creed 2 and I always have to do something different, but I would sneak up behind them, pull out my knife, and either stab them through the heart or slit their throat (seriously, try attacking someone from the back when your knife is drawn).
Sniper them. If I don't have a sniper, pistol from range. If I don't have that, arrow. If not that, ten thousand quick cuts with a blade.

Easily accomplished. A bribe, or a syringe full of tetrodotoxin, and I am a distinguished guest, just for the night of course. Permanently stealing someone's identity would be so boring. I just happen to be a friend of the host, he has a flute of champagne? Ah, a Coke. Darker, and allows me to have ever so much more fun. Ricin, in just high enough doses to cause the pain in every nerve, small amounts of mercury to make it impossible to fully counteract combined with amobarbital to make them unable to scream. The first symptom, a slight lassitude, a feeling of lightheadedness. Then, the amobarbitol starts kicking in, rather fast acting and the victim feels a sudden urge to use the restroom. He gets there usually. Then the ricin begins to taken effect... He might scream once or twice. A minute or so later, he is unconscious, five minutes past that, he is dead.
Even better, 'I' was never at the party.

Team Fortress 2, a favorite of mine is either a Spy's backstab or a well hidden stickybomb pile.
Valuing practicality above style has a style all its own. Sniper rifle from a long distance away, center mass, after a lot of research into the subjects patterns. If something goes wrong, it's better to be forced to pull out of your position quickly then to get stabbed in the face.
