The only ones off the top of my head (that you don't have) are Legend of Grimrock (must buy, seriously) and Two World 2, which is a pretty decent game. It's not amazing, but it's a solid game.

Oh, and I noticed you don't have Titan Quest. It's a pretty decent ARPG. You might want to check out Path of Exile and Akaneiro Demon Hunter.

just kidding, but seriously you are missing out big time. I just finished playing Ys Seven [http://www.youtube.com/watch?v=MbAUHmHk0Sk] and oh man was it awesome. epic boss fights, amazing soundtrack and overall extremely fun game. Don't be so quick to judge, jRPG's can be just as great as wRPG's (or in my opinion much better)

I hear great things about Dragon's Dogma... I haven't played it myself, but it got good reviews, and is in my list of games to play!

EDIT: Looked it up... and HOLY CHRIST WHY DO I NOT HAVE THIS GAME AND WHY AM I NOT PLAYING IT RIGHT NOW!!

Also... Have you thought of playing Bully, or a Zelda game? They are also good games with RPG styling!

Finally, like you have Borderlands, have you tried Bioshock 1/2, or Dishonoured... Shooters with level up elements in, and powers to obtain that mix up the gameplay a bit!

And as an extra... The Testament of Sherlock Holmes... Because, well, 1st person Sherlock Holmes! (No! I don't care if it is not fantasy OR an RPG... people just need to play it!! Because it's the best Sherlock Holmes game on the XBox...)

And since it's going to anyway this can also be a "what's your favorite RPG" thread.
You seem to have an affinity for both Elder Scrolls games and very old RPG's from bygones past, yet I don't see Daggerfall up there. That's my recommendation, if you don't mind booting up the ol' DOSbox. It's a very fun game with a game world that is quite literally fifty times bigger than Skyrim. If Bethesda remade Daggerfall with current generation tech, it would easily top Skyrim considerably. Alas, such a thing is just not possible.

This is more of a list of games I'd recommend to an RPG lover: Arcanum, Divinity 1 and Beyond Divinity since you already own 2, Knights of the Chalice, Wasteland, Avernum, Neuromancer(more adventure than RPG but still good), Darklands, Wizardry, Temple of Elemental Evil, Vampire Bloodlines (maybe Vampire Redemption if you can find it/stomach it), Ultima (again, if you can stomach it), Gothic, Betrayal at Krondor, the Ishar compilation, Lands of Lore, Might and Magic, Quest for Glory, The Summoning, Xenogears, Arx Fatalis, Secret of the Silver Blades, Drakensang, Wizards and Warriors, Pool of Radiance, maybe Risen?

Also, this is not an RPG...not completely. Well, you do Role-Play...it's a text-based game, loads of stats...interesting to read, though the idea might seem strange at first: Academagia. There's a Let's Play on Something Awful if you want to know something more about it. It has a huge variety of choices, free DLC and if you want something in the game you can write it yourself and the devs will add it. Might be worth a go.

I'll second this recommendation. Dragon's Dogma is great! It's a little bit like Demon's Souls or Dark Souls in the sense that you have to pay attention and dig the narrative out of the clues in the game world if that's your thing. If it's not, you'll still get an interesting world, great combat and customization, decent stats and leveling, and a fresh take on open-world action rpgs.
