You should use torrents instead of watching low quality youtube videos.
http://Nyaatorrents.org is a great torrent search client for anime, and it's easy to navigate.

I'm a little confused as to where my post suggested I was watching low quality youtube videos.

Wanting easy stuff to begin with then I would recommend any movie that's come out of Studio Ghibli. I'd also recommend Azu Manga Daioh and Cromartie High. Both are light hearted school based anime, the first is set in a girls school and the second in a boys, Cromartie is by far the weirder of the two.
