I just beat me2 again, and i need 1 more achievement, i was wondering, if you switch the level to insain, at the start of the next playthrough, will it count?

If it's the same as ME, then yes. As long is it's one of the first things you do when you start your new game.

I'm quite sure that you can just do the new game plus thing, and you choose your difficulty in the beginning. It did that with me anyway.

Your best option (if possible) is to import a character and start fresh on insane. You will get the bonus from both games and not have the hassle of fighting the tough enemies right out of the gate giving you some breathing room.

Just remember that you have to play it through Insane the entire time. You can't start on Insane, swap down to Easy and then switch back up to Insane for the final boss.
