Uncharted Series, Final Fantasy XIII (if you're into that) for PS3
Final Fantasy Series, Suikden, Dark Cloud 2 for PS2
Legend of Zelda: Twilight Princess, Legend of Zelda: Wind Walker, Animal Crossing, Harvest Moon for Gamecube
Sonic Series, Final Fight, (Had a Sega when I was so young, don't remember many games) for Sega
GoldenEye, Mario 64, (pulling a blank here for the 64 though I have 4 of them) for Nintendo 64

...I'm not going to give you a huge list.

Because you only need to play 2 games.

Skies of Arcadia Legends on the GCN

and Legend of Dragoon for the PSX (you have a PS2 I just kind of assume everyone plays PS1 games with it too..)

After that, you're kinda set for life. >.>

Topics like this I like to recommend some gems from the 16-bit era -
Phantasy Star (especially 2 & 4) if you want more of a huge open world(s) type game. Even people who don't like jrpgs love the original Phantasy Stars.
Soul Blazer - if you like the more Zelda-ish type action-rpgs.

I don't know if you can get them for a console anymore but you can jack them into your phone pretty easily.

I would also recommend picking up San Andreas for your PS2. People don't usually think of it as an RPG but it kind of is.

If you want something a little unique, try Valkyria Chronicles: it mixes RPG with strategy and shooter elements and it works really well. It's also a joy to look at.

Who'd make you do such a malevolent, horrible act?

I don't know about console games, but I'll go on to say Fallout 3 & New Vegas

If you're going to recommend Soul Blazer I would suggest the other 2 Quintet RPGs for the SNES:
Illusion of Gaia and Terranigma specially Terranigma, that's easily the best of the 3, though it wasn't released in America so you might have to import the European version, though I think it might be available in the virtual console these days.

I don't remember those at all but I love Soul Blazer. Thank you for giving me something else to find & jack into my phone.
I'll of course check the virtual console first ; ) ; )

The Tales of series is pretty cool. Symphonia for the Gamecube and Vespira for Wii...I think, I can't really remember I just played Symphonia.

nononono...
For the wii it's also a Symphonia (dawn of a new world), sequel to the first one for the GC (I also gave him that option)
Vesperia is for the Xbox360 and I also think there's a version for the PS2/3 from this series??

Adventures of Alundra... It's a PS1 game, but it still holds up, and as it has anime style graphics it doesn't look/feel too dated!

Also Dark Cloud for the PS2 is a pretty fun affair! Definately worth a look!

Only thing I can think of that hasn't been said is Legend of Mana which is a PS game. It was very fun, beautiful to look at, and has awesome story lines.
