hmmm... as long as there we're no side effects and I could still do it if I wanted to...
I'd choose to get rid of the requirement to sleep in order to live.

Think of all that extra time, I would be able to do sooo much more.
Who wants to increase their conscious time on this earth in order to cram in more experiences.

Other cool ones to get rid of would be : exhaustion (both physically and mentally), bathroom needs, eating (you still could if you wanted).

if not breathing means i no longer need air, ever, and therefore cannot drown nor ever run out of breath when exercising singing etc., but i still CAN inhale/exhale at will, but dont have the urge, then i sure as shit would give up breathing. space exploration here i come!

but more seriously, it would open up a whole world to me. exercise for me is always limited first and foremost by my running out of breath, so soccer would become worlds easier. i could swim with no fear of drowning (big fear of mine), i could sing to my heart's content, annoy the shit out of people by talking really fast (not auctioneer fast, but i can get quite a few words out, just keep running out of breath because i forget to take a deep one before i begin) and probably a dozen other things i cannot think of at the moment, but i would realize with my lack of necessity to breathe.

OH! i could become a much better competitive drinker (since i cant legally drink alcohol yet, its mostly just sodas and milk and junk, but the point remains)

Actually, dying would be the process. And you can say that aging is a slow method of dying. You'd reach an optimal age and then then never age or have potentially fatal wounds occur. You could still add muscle mass and stuff because that isn't 'dying' in the same way that amputating a leg isn't dying[footnote]Though your leg would theoretically remain alive forever and neither you nor it would bleed out so you could get it re-attached at any point in time ... in theory, though whether irreparable damage like having the leg crushed into non-functional muscle-sludge, counts as dying or not ... hmmmm ...[/footnote].

OT: Breathing as long as my body somehow managed to still aerobically respire. I mean, if you didn't need to breathe then either you somehow manage all the effects of aerobic respiration without actually needing to breathe, or you can only get your energy through anaerobic respiration, which would do some serious damage to your ... everything.

If it was the good option then it would be awesome. I could remain underwater forever with the exception of eating and drinking, I could function solely on aerobic respiration (like running and stuff) because I wouldn't have any issues with getting the necessary amount of oxygen, and theoretically still use anaerobic respiration for when the task exceeds my maximum capacity for aerobic energy sources.

I would say not having to eat or drink anything. That would be a triple whammy as it means no more poo or pee either.

Pooping. Never been able to poop comfortably my whole life. This does not mean I want a colostomy bag. I'd just rather my poop disappeared from my body without having to put in all the literal grunt work to expel it. When I'm really backed up, I can sometimes feel it move through my entire colon (which is agonizing, by the way), until finally it loudly gurgles its way into my rectum. I have problems. I've seen many doctors and the only solution so far has been taking Miralax... for almost 15 years. It doesn't really work that well anymore, either.

I'd only give up breathing so I would be able to run forever and swim forever, but as the first commenter said, they are all part of what makes life interesting.

Isn't the point of "not having to do it" that you could get by without it?

OT: Sleep for me too. Would like an extra 6-7 hours in my day.

I'm assuming that in these hypothetical scenarios, giving up these bodily functions does not have a negative side. There is just no need to do it.
