I would choose Shining Finger Sword from G Gundam or the ATATATATATATA attack from Hokuto No Ken
PS: attacks that require a weapon also count and Gun-Fu

Something defensive.

While it's not martial arts as such (more of a dashing broom-uppercut-leap thing), I'm tempted to mention a move from a certain game called Hisoutensoku, which I assume no one's ever heard of. Why? It has the best leaping uppercut move name ever: Escape Velocity.

Hadouken being taken already (and me not knowing any other street fighter moves other than shoryuken), I'll take Kazuya's lightning screw uppercut. Or Paul's phoenix fist. Anything with fire or lightning involved, really.
