Yup! I don't care if the game looks like ass compared to today's games! I don;t care if I can't easily navigate the world! I'll gladly wander around Vvardenfell, hopelessly lost, just to hear the music and see the world.

Now,in the days of yore,I played the game on the Xbox. A year or so ago,I got it on Steam. We all know what that means. What's a Bethesda game without mods, right? Now,I'll be up front here. NO GRAPHICS MODS. I don't care for that stuff. Unless it changes the god-awful plastic wrap effect for enchanted gear. And only that.

And yes,it's the GoTY edition. Gotta rock Bloodmoon and Tribunal, man!

Go there. You can find all the mods you want on there, if they've been made.

No graphics mods? props to you, but I suggest you at least consider better faces/better bodies. They wont alter the world too much, and they're frankly a gigantic step up from the default humanoid graphics.

Other than that, faster magicka regen. Makes playing a mage so much better.

Well, have a look at the Morrowind Overhaul - it's a collection of mods - some graphic, others not - there is lots of them. Just turn off the graphics ones if you wish (although, I really like the better bodies mod there).

Other than that, let's see from the top of my head:
Vampire Embrace - if you want to be a vampire, it's probably the best vampire mod for Morrowind, maybe even among other TES titles, too. It even has mods supporting it for extra stuff.

MADD Leveler - stat unlocker and an overhaul of how the levelling system works. Let's face it - the default is shit, this one makes it more organic, so you don't have to be planning for few levels ahead and stuff.

Galsiah's Character Development - it's an alternative to MADD. I personally use this one but whatever - both are good.

DB attack mod - delays the dark brotherhood attacks until it actually makes sense to have them, not straight from level 1.

Regionally Known Werewolves - if you like playing a werewolf, this is nice - if you're seen while changing only that area knows you as a werewolf, not the whole world.

Starfire's NPC Additions/Morrowind Comes Alive - fills the game with more random NPCs. I personally only use the first one but the two are compatible - the second one tends to make the new NPCs stand out more, as they use new heads, while Starfire's just makes generic ones.

NX9's Guards - sort of what the above two do but for guards - it adds more diversity for guards like male and female ones, and they also have more gear choices.

Races Are More Fun - it's alright, I suppose - it tweaks the races' powers and some stats. Nothing big, nothing incredibly awesome and must have but I find it a nice little addition.
