Vegans don't die from veganism... usually the worst-case is anaemia, but if they eat properly then there should be no problems. You should look up fruitarianism if you want to see some really wacky eating habits.
Still, though, I do not understand why you think it silly for a human to have compassion enough to be unwilling take part in, however indirectly, the suffering of another being. I just don't see it. To me it is the most sensible thing in the world, and shows a lot of empathy for others, whether human or not.
