Gothic 1 & 2 are vastly different to 3, and highly recommended. Gothic 1 & 2 are tough and very rewarding, fun all the way through in my opinion, and they are also quite different from any other games (apart from Risen) out there. Gothic 3 was a buggy mess on release, but if you only played it without the fan patch [http://www.worldofgothic.com/dl/?go=dlfile&fileid=166], give it another shot. The fan patch turns gothic 3 from horrible to really good.
Gothic 4 is bad. Really bad.

Fallout New Vegas was a huge step up from Fallout 3. Buggier, but with a great setting and atmosphere.

Divine Divinity takes most of the good parts of Diablo, introduces a far better story and setting, and has a far deeper character customization system. This game can be found on GOG.com for $6, so a real steal.

Nox is another game that borrows a bit from Diablo, but it is not at all a Diablo clone. Here you get 3 different characters, with radically different playstyles, and they also get their own storyline to play through, with different levels (they all converge at points, but they are still different enough to warrant 3 playthroughs). Can be found on GOG.com for $6. I must sound like a GOG advertisement both, but truth to be told GOG has a lot of great cheap games.

Vampire the masquerade: Redemption. Bloodlines might be the better vampire game (when fan patched), but Redemption is more of an action hack & slash RPG. Good character customization, a good story line and fun gameplay. Plus: GOG, $6.

Divinity 2: This game lets you turn into a dragon, that should be reason enough to love it. A fun and very lengthy action RPG, get the dragon knight saga (as it contains the expansion, plus a slightly rebalanced campaign and better graphics).

titan quest is great for an action RPG similar to diablo and torchlight.

witcher 2 is really good i didnt enjoy the first at all and only bought the second because i really like what CDProject red / gog do and it was a really good game.

the Gothic games are very similar to Risen, i dont know what one to recommend since i haven't played them
As i stated originally, i did not like Any of the Gothic games, but loved Risen, not sure if i caused the confusion on that one.

Bastion?
Epic: music, art, narration, humor, combat
Yes.. you should get Bastion...
Do it now!
Got Bastion, beat it, need another. Good game though, absolutely atmospheric and kept me invested til the end, which is rare nowadays with most games whoring out multiplayer, but thats a subject i can rant on for ages :p

Indeed, Risen is a good game, I mentioned that, but it may have gotten lost in my paragraph explaining why i hated Gothic 3. I shall look into Might and Magic 7, as i enjoyed the ps2 version ages ago lol
Might I recommend Might & Magic 4-5 world of xeen instead? The might & magic series is not very action oriented (be it 1, or 7), but 4-5 just feel very well balanced. If you have both installed, they combine into one huge game (and gog has might & magic 1-6 in one pack for $10!)

And how could I forget. Check out the games by Soldak [http://www.soldak.com/]. Several good action RPGs there.

Getting Divinity 2, and looking into Nox. Divine Divinity is another that has my attention. Vampire the Masquerade seems a bit too... how to say it gently. Pornographic would be a word. It looks solid, but seems trashy at the same time. It seems as though society has vampires on the Twilight side of the genre or the Dracula 2000/Queen of the Damned side, which makes em seem like a techno club crashed onto a hot topic

Fable: TLC is still one of my favourite games ever. Might and Magic 6, 7 and 8 are still pretty good games, though to say the graphics are looking dated is like saying Margaret Thatcher is looking a little past her prime now-a-days.

The witcher 1. Haven't tried 2, because 1 annoyed me so much. 1 also didn't run that great on my machine. Its somewhat old. It plays Skyrim adequately, if not for stuttering every few moments to load a new area.
If you can't run TW1, don't even bother trying TW2. I love both games, but if they're not for you, they're not for you.

You could try Nehrim, a German-made total conversion of Oblivion. Fully voiced with subtitles, great new environments, new story, etc. Here's the Wikipedia entry if you're vaguely curious:
http://en.wikipedia.org/wiki/Nehrim:_At_Fate%27s_Edge

and the developer's website (in English) if you're really interested:

New vegas has a lot of deept. anyway, STALKER games are really good if you want more action than rpg, it is a really inmersive game.
And bloodlines is amazing, if you havent tried it yet you are really missing out.

I think you might be thinking of Bloodlines, which was heavy on the skin, and not Redemption. And Twilight? No, absolutely not. The setting has borrowed a bit from the world presented in Interview with a Vampire/Queen of the damned, but don't think of it as anything like the junk found in the movie Queen of the damned.
Look at some of the screenshots, I think the game might be quite close to what you are looking for [http://www.gog.com/en/gamecard/vampire_the_masquerade_redemption]

Divine Divinity was the first game in the Divinity series, then there is Beyond Divinity, which is not considered to be a part of the main series, and finally there is Divinity 2. You might want to play them in order, though you don't have to.

Two Worlds 2 is pretty good (couldn't say the same about the first game). You can give the fallout games a try (they are all very good) and the Fable games are.... a decent timesink

Try 2, you might like it better. It's regarded as a classic. And then there is arcanum... go play it.

so... you want better interaction, better loot, a deeper world/story, good character customization... I hate to say it, but you might try looking into MMOs... that is, if you can stand the grinding.

Also, Knights of the Old Republic 1 and 2.

Omg, Play Witcher 2.
I played Witcher 1 for 15 minutes, about 5 times (never even got out of the tutorial where that Mantis attacks the castle) because the combat was clunky and the game was not optimized.

Witcher 2 is easily the greatest Action RPG since....Drakan: Order of the Flame (*crickets*)

Drakan: Order of the Flame is easily in my top 10 games of all time. Forgot about that one *lashes myself, monk style* Gonna grab Witcher 2 as it seems to be solid.

I recommend Torchlight. It doesn't have much of a story but the gameplay is a lot of fun and the RPG mechanics have a fair bit of depth (for an action RPG).

Erm... also...

Divinity II: The Dragon Knight Saga sounds like something you would enjoy. I haven't played it yet but I plan on picking it up and it seems like a really solid action RPG.
