X3 (either Terran Conflict or Albion Prelude) are huge time sinks once you 'get into them'.

Starting off can be slow but, by Christ, they can evolve into something you'll play for days without sleeping.
This was going to be my answer - I probably put over 500 hours into Terran Conflict in a single playthrough.

I remeber how pleased with myself I was the first time I designed a complex that produced microchips and silicon wafers without me having to do ANYTHING to it - apart from an initial injection of energy cells.

Designing self sufficient complexes like that are when you start being able to truly create an empire.

Now - where's my fleet of capital ships?

Definitely look into Terraria if you haven't already. It's basically Minecraft, but in 2D - which allows for more aesthetically pleasing graphics with very much the same customization options.

Yeah. Given enough time, you can transform the entire (stupidly huge!) map into a glorious golden phallus with a replica of York Cathedral on top. What more could you ask from a game?

Dynasty Warriors are massive time sinks, I put like 70 hours into Gundam Reborn.

Persona 4. It is a fantastic game, that masterfully blends JRPG and life sim genres, with amazing story, great characters and without that much of a grind.

It has only one negative thing about it and that is the first hour, which is basically a huge wall of text. But after that, it becomes one of the best damn games I've played.

So,if you have a PS2, get Persona 4. Or, if you have a Vita, get Persona 4 Golden, which is basically PS2 version, but with even more content.
