I haven't seen any of these and as I'm sure that the are a lot of people who can point out some good series that the rest of us have heard of I thought I might as well start a thread on this

Btw I strongly recommend any one who has not done so to go and look up akumetsu, which is sure to appeal to you if you loved death note

Fullmetal Alchemist. Very well done. Don't do Naruto.
Death Note is pretty good, too.

The thing that made me read manga was watching the anime Suzuka, but it stopped halfway through. So I started reading the manga and I loved it. So I recommend Suzuka.

*EDIT: Air Gear is good too

Flame of Recca and Runouni Kenshin aren't bad if you like fighting oriented manga. I don't know what genre Hikaru no Go would be put under, but it's pretty good, too.

I personally enjoy Battle Angel Alita. The spin-off series they're doing of it now is pretty good too.

Also, Siegreich, is that a Shaman King avatar I spy? Faust VIII if I'm not mistaken?

BioMeat - Nectar ( it's a survival type manga, where lots and lots of people are eaten. Also it's funny how some pricks die in it. )

The anime was god awful, and i suspect the manga wouldn't be much better.
it's a matter of taste i guess. i enjoyed watching it a lot more than other animes, plus the anime was cancelled halfway through the story and i promise, the real ending to Elfen Lied is epic.

Rawr! (see my avatar!)

That said, King of Hell is quite fun for a martial arts manga, but it can be slow at times.

You would be surprised man. In the latest chapters of Naruto it became pretty obvious that the guy behind the whole story is a pretty awesome storyteller, and I mean AWESOME. It summed up the whole story of the thing and made a 180 degree turn to the whole thing. And the guy is not afraid of killing important characters for the sake of telling the tale of his hero, you gotta love it when they kill a character who you've seen for like 3 years. I get why you try to make the point with Naruto, but it actually applies more to series like Bleach or One Piece, which are constantly going nowhere, the same way Dragon ball used to be.
(However, unless I'm wrong, Dragon Ball was the first important one to do this so in my heart it will always kick ass)

I'm quoting specifically so that you're notified of this, which really is a waste of time as you're likely to check this thread.

Anyhow~

I see you've read Death Note, so...
Negima! Is pretty good.
Hellsing is great, but gets rather gory.
Kuroshitsuji is a new series, which I have heard great things about.
D. Grayman fer sure.
Don't touch the Haruhi manga. (technically a suggestion)
Oh, and Hollow Fields. It's brilliant. Plus the person who writes and draws it is really nice =) And needs all the purchases she can get.
