So one of the biggest things I was excited for when ME2 came out was to learn more about the reapers, ie where they came from, who built them, why were they built, why do they kill everyone, etc. ME2 ended up only answering the last question, it's how they reproduce, but the others remain unanswered. Will ME3 answer those questions for me? I really want to know....

At this point, we have no idea what we'll learn about the Reapers. However, my personal theory is that the Reapers were either a mechanical race that rebelled against their masters and rebuild themselves into cyborgs, or they were an organic species that went all Cyberman/Dalek and rebuilt themselves into giganto cyborgs.

In all likelihood, we will be learning a lot more about the reapers, if only because that'll probably be the key to stopping them forever.

I really hope we do learn a lot more about the Reapers. I would be very disappointed if Bioware didn't address their origins at least.

It's true, we only learned very little about the Reapers from ME2, the first being they're not entirely mechanical but a mix of organic and mechanical substances, the second being they reproduce by melting down the "genetic goo" of entire species.

The problem though is part of the Reapers image is their "beyond comprehension" description. Like Lovecraftian horrors they appear threatening because they're so powerful and have motives and history that are completely alien. Bioware is risking making the Reapers lame by finding out their history and there are many sci-fi cliches they can fall into. I'm hoping they come up with something original but to answer your question, no you're not missing anything. You know everything there is to know at the moment.

As for what we'll find out in ME3 is simply speculation at this point.

This is some serious speculation here on my part but here's my guess.

Mass Effect 3 is the end of Shepard's saga but not the end of the Mass Effect universe that BioWare, fortunately, created. The Reapers are the over-arching enemy throughout the Mass Effect games and each one built up the Reapers story. I don't believe that Mass Effect 3 will answer too many questions about the Reapers.

I believe that in the end Shepard will save the current galactic generation from Reaper doom, but not end the Reaper threat. In order to keep the Mass Effect universe teeming with tension.

Although I'm not agaisnt Shepard ending the Reaper threat and future games delving into a different foe or answer more questions about the Reapers =]

I really hope that they don't reveal much about the Reapers. The easiest way to make a mystery boring is to explain it.

After all, isn't their unknown nature part of the appeal? Y'know, the whole unknowable, eternal, implacable menace thing?

...

That said, if I had to guess, I would say that they were once a "prey" species that were to be cultivated and harvested in much the same way as the Protheans and the current bunch of races. They managed to fight off the "original" Reapers, but ended up taking their place.
