I never had any trouble with the combat in ME1.
What class(es) were you and what styled did you prefer? I'm generally not very good at FPS, so I spent most of the time standing back from combat and using ranged attacks on everything.
I played a Soldier/Sniper specialist first, which sucked on Eden Prime because I couldn't unlock Sniper Rifle for several more levels. I spent a fair amount of time hiding in cover, regening shields.
Basically, if my shields went down, I was in trouble, so I hid and let my party take the heat for a little while. I tried to never ever take actual hit point damage.
By the time I was done on the Citadel (and with some minor fetch quest side missions there) I was leveled enough to unlock Sniper Rifles, but not much else (I put pretty much all my points into doing that). At that point, the game became all kinds of fun. I stopped fighting Mako enemies in the Mako to get the extra XP and because it was more amusing using the Sniper Rifle, playing hide-then-shoot-then-hide with all the one-hit-kill enemies. I would also save-spam, saving between each battle, because one hit from a Armature or Colossus would likely kill me. But it was fun! ^^
Being higher level mostly meant that my guns did more damage, and that I could take maybe one hit and survive (from a Rocket Turret or Colossus).
When I played as an Adept next, it was harder, but because I was familiar with the game I could anticipate encounters and know about what I was getting in to. I always save-spam, but that's just how I play - as Psycho Mantis once said, I am a very cautious person.
Mostly, it's learning what weapons work with what classes and using everything you have. There is a very steep learning curve, but playing a Soldier first (strongest, but dullest class) lets you get used to using your party member's abilities while not having to worry about your own.
At least, that was my experience.
