As far as LP-ers go, Sooomungry is pretty "under the radar" for Youtube standards. Less than 30,000 subscribers.

His Transformers playthroughs are informative (War For Cybertron went through the G1 history of every character he played as during their level) or funny and right now he's doing a Pacific Rim game playthrough.

Dilandau, most known for his numerous adventure game LP's(old sierra games, TLJ, Myst games, etc)
I'll second Dilandau. His Let's Plays aren't so much entertaining as more informative, but he really knows his games, and he's pleasant to listen to.

I'm going to add two people here:

The Heartless: http://m.youtube.com/user/666theheartless666

He's a very funny horror gamer that somehow never swears, which leads to some hilarious insults.

Mangaminx (therpgminx): http://m.youtube.com/user/TheRPGMinx

A female British gamer who does a variety of indie games, no AAA. She gets extremely angry and is seriously funny.

Edit: I did this on an iPhone, so if those links don't work just search their names.

CruelestChris, or EvilTim for any SomethingAwful users. He doesn't update as much anymore and has a nasty habit of starting multiple Let's Plays before finishing his originals (if you look through his video/channel comments, nearly everyone is asking him to finish Perfect Dark instead of starting up new LP's like Turning Point or Homefront), but he has a fantastic sense of humor and wit, has a great microphone/video capture software, and is pretty thorough about explaining the easter eggs, development history, and other fun tidbits about a game.

Thus far, he's played through several Castlevania games and Homefront, as well as having nearly completed the original Goldeneye, Perfect Dark, and a few others.

ResearchIndicates' let's play of Jurassic Park: Trespasser is very good. http://www.youtube.com/watch?v=k6A3SaRr26M&list=SP0058A651EB882B48
Have to agree with this, I finished the series today, and plays out more like a documentary than just a "let's play", Trespasser was a game I couldn't wait for back in 1998. I got it on release and wow, what a let down, to me the game was unplayable. It was good to finally see how the game played out without having to resort to using that hideous control scheme. I wish ResearchIndicates had more let's play videos, I will look at his Crimson Skies one next.

Im not sure if he is underrated or not but Jesse Cox (youtube omfgcata) is one of my favourites as he is energetic and funny and actually seems to genuinely enjoy what he is doing.

I'm not sure about an underrated reviewer, but I do know a underrated LP'er (well two technically): Coolguy and TheLastroboky aka The Time Warriors. They are incredibly fun and funny and have a way of creating their own little running gags based on the games they play. So far they have done Transformers: War for Cybertron, Dark Messiah of Might and Magic, Warhammer 40k Dawn of War II and it's expansions, and currently the first Call of Duty and its expansion. I'm not sure if they are really underrated since they have been gaining a following on Something Awful, but their Youtube channel only has a little over 1,000 subs which I think is too low given how great they are.

Well, I know this guy from his Skyrim creation kit tutorial and more that I know, he is actually a LP'er. I do enjoy his channel and hoping people will know more about him.

I thought Markiplier was underrated at first because I was just enjoying his SCP videos, but later, his popularity grows. He is probably more entertaining than PewDiePie which I find have a funny percentage of 0. Markiplier's not underrated but whatever. (What am I doing)

Zero from Review Zone HD has pretty decently good production values, and he seems like quite the objective reviewer. GigaDan and Dr. Aggro from Gigaboots as well for the same reasons in the former's reviews, and their pretty decent comedic chemistry in their quick plays.

Got to agree with you there although as far as I am aware he is quite well known. He also does a podcast which has just been renamed to the Co-optional podcast if I remember correctly with total biscuit and dodger lee where they have a special guest and spend a couple of hours talking about video games. The first one since the rename was especially good as they had someone who works in the game industry on as the guest so I learned quite a bit at the same time. Anyway enough on that if you want to check out the podcast it is on a recently created you tube channel called Polaris which also has a number of good lpers and lots of news pieces unfortunately pewdiepie is one of them :( I will post the link for anyone that is interested, http://www.youtube.com/channel/UCSvQyDawUyfXzrSq4dTVraQ

I enjoy Damo2986 [http://www.youtube.com/user/damo2986]'s Let's Plays. He really shines in strategy games (mostly Total War) but most of his other LPs are great too. He even got me to watch quite a few videos of his Sims 3 LP.

Taking the word underrated quite literally, Sanguine Vixen. Painfully under-viewed. For unknown reasons she's spent the last half year or so taking everything down but before then she had a pretty good collection of Bioware LPs. Her Jade Empire LP was great.
I looked it up, doesn't seem like a channel that does full let's plays anymore, more just short little vids.

I was tempted to mention Jerma, but he's getting attention now. Still, look him up if you love funny live commentary.

OP mentioned Brutalmoose and Hidden Block
Hidden Block is like a den for underrated reviews and Let's Plays
Personally, I recommend checking out Lonely Goomba, 8-bit Duke, Tentacle Touchy, Mike Ironfist's Oldschool on the Go and A Dog
But seriously, if you need something to watch, try Hidden Block, it solved my free time problem :p

I'm not sure how underrated he is, but I'm a big fan of Magneous. He has a really great Let's Play of Kerbal Space Program which I like because it combines game commentary with various space news. He also has a lovely voice.

The Yahtzee Let's Plays are surprisingly underrated considering how popular ZP is. The most recent one (Normailty) is 3 hours long, but some of the funniest stuff around. The second commenter, Gabe, has some great stuff, though his pseudo-intellectualism somehow makes him even more abrasive than Yahtzee.

ME!

Just kidding. I'm awful and haven't updated in over a year. And then my saves were deleted by accident. Sigh.

I just realised I don't actually follow any LP:ers or reviewers on a regular basis, but I will agree with OP that Modestly ProphItic are pretty good - the little I've watched of them. As soon as my internet is out of bandwidth jail I'm going to continue watching their Bioshock: infinite series, although I got annoyed at the fellah who'd played it before just rushing through things at times.

I like:
ZetaPlays who's on a quest to play every NES, SNES, and Genesis game EVER, sans a few sequels, and sports games.
Bit of a foul mouth now and then.

Kikoskia is pretty cool.

Necroscope might meet the tastes of some.

Two Best Friends Play though hardly underrated, and pretty popular.

Not sure about the underratedness of the Yogscast group.

Challenge Accepted is pretty nice.

Girl on Duty is pretty cool.

I've recently started watching iHasCupquake.

Rooster Teeth's let's plays are pretty awesome.

Dunno about the underratedness, but I listed the bulk of the lets players I follow.

P.S. I forgot about Walkenthroughs! Dunno how I did, but I'm adding it now.

Jingles, most known for his Elder scrolls LP's, but has done others
That must be some kind of impostor.

The real Jingles. [http://www.youtube.com/channel/UCpnjlvS2zxhbNJuGNo_TxkQ]
