Scale the Summit is what I instantly go to. I can't say that there are any other bands like them, really. They're an instrumental prog metal/rock outfit that kind of borrows from bands like BTBAM at times, but they are WAY more melodic. They just came out with a new album about a month ago, and it cracked my top 5 of all-time within a few listens. In fact, the ending of said album is my favorite ending to any album ever. Always gets me to catch my breath, without fail. (It's called The Collective by the way).

Yeah, I found sabaton about 3 years ago and I haven't been able to find anything as epic as sabaton.

Got another that I'd like to share. Many people know Tool, but not nearly as many know of Maynard's other band called A Perfect Circle. It's pretty close to the same style as Tool, maybe a bit less trippy than some Tool though. I dunno.

Rhapsody of Fire- an Itallian Symphonic Power Metal band. That has albums with stories in them. Set in a Fantasy World
Luca Turilli-very same premise except with a dash of Science Fiction. Yes he is the guitarist for the first band.
