I would go for anything that really captivated me, regardless of genres.
I usually give up instantly if the game does not get me from the start,
so these games might not be the run of the mill mindblowingly good games.
But any game that I feel compelled to finish deserves a spot on my list.

Abe's odyssey/exodus
Grim fandango
Fallout 1 and 2
Sid Meier's Alpha Centauri
Master of Orion II: Battle at Antares
System Shock 1 and 2
Farcry
KotOR
Sins of a Solar Empire
Planescape Torment
X-wing vs Tie Fighter
Nethack
AvP 1 and 2

And for games that don't really have an ending.

World of Warcraft
Heroes of Newerth, prefferably DotA but that's a mod so meh.
Team Fortress 2
Wesnoth
Dwarf Fortress

A kickass RPG, Biowared if possible. Epic strategy game, Starcraft/Command and Conquer/Supreme Commander styled. An FPS to demonstrate the superiority of mouse keyboard. Perhaps a fightsim if you find one.

Erm...STALKER, System Shock 2, Half Life 2, DOOM, Quake, Unreal Tournament 2004, Serious Sam II, The Longest Journey, Grim Fandango, Silent Hunter III, Il-2 Sturmovik, Freelancer, X3 Reunion, Elite, Elite II, Privateer, Galactic Civilizations II, Hearts Of Iron II, Empire: Total War, Hidden and Dangerous II, Killing Floor, Neverwinter Nights, Baldurs gate 1+2, and some others I can't think of.

I take this mans choices (just because it's him) and add:

- Deus Ex
- Fallout
- System Shock (The first game make you at least enjoy it without having the difficulty ripping your balls of.)
- Thief
- Planescape: Torment
- Outcast
- Duke Nukem 3D
- World in Conflict
- Company of Heroes

Crysis (Because it's a game in it's own right and everyone should treat it so, it's a crap-load better than anything from the CoD series, and prettier too - it doesn't need a mammoth to run and I die a little inside every time someone suggests it's only useful as a benchmarking tool. *sniff*)

i totally agree with you

i find it to be one of the most fun shooters iv ever played. it feels like the spiritual successor to FarCry series from consoles (Not FarCry 2). im not saying FarCry 2 was bad, it just didnt feel like the same kind of game. it should have been marketed as a new ip RUNNING in the cryengine...

Any age of empires/mythology except from number 3 it is complete crap compared to the rest

Edit: Most Sid Meier's games there mostly awesome
