In the old PlayStation era, a game called "Jedi Power Battles" gave you a cheat code after you beat it. Something called "Ultimate Saber" or something like it. It turned your lightsaber into exactly what you want. And it made the game EXTREMELY easy.
Knights of the Old Republic had the right idea with lightsaber duels. Have the fight visually involve blocks, but behind the scenes you or the enemy are taking damage. Once someone runs out of health, the animation switches to the strike getting past the block, and down goes the opponent. Everyone's happy. Lightsabers appear to kill in one hit, but duels aren't over in the span of two seconds.
