STALKER actually did this pretty well if I remember correctly. While you had breakpoints where the character would suffer extreme exhaustion, allowing him to sprint for only a few meters or where he could not move at all, there was also a system of increased stamina loss the more you carried. So while the breakpoint for extreme stamina loss was around, say, 50 kg, there was already a noticeable difference between 10 and 40 kg. Still, even that could do with improvement.

I learned about the ice spikes when I found out if you deliver the killing blow while the dragon is in air there is a chance it won't give up a soul or fade to a skeleton, I once pushed a dead rag doll dragon all the way to Windhelm from what ever the closest dragon peak is.

I was getting incumbered by food more than all the plants I'd pick up (but only because I would put them all in a box in my Windhelm house), I though I was still playing New Vegas and I would need to eat and drink occasionally... maybe even see a point to cooking.

At least you can still move around. Plus, I always have a horse handy. The horse doesn't complain if you have to much and you jump on.

Obviously the answer is to eschew backpacks and acquire pockets, because in Skyrim pockets are noneuclidean space, while backpacks are normal space. How else would the pickpocketing perk make sense.
