My favorites are Gurren Lagann, Baccano, and Full Metal Panic! (+ The Second Raid, no Fumoffu). I would watch them in that order, Full Metal will take you the longest probably.

Blue Exorcist has a similar feel in many ways to Bleach and you might also like Fairy Tail. Rurouni Kenshin may also be for you, though if you go that route I'd watch Samurai X: Trust and Betrayal first. Claymore perhaps? It's pretty awesome (and I don't like action based anime for the most part, so that's saying something) and I've seen/read several anime/manga that have suspiciously similar stories, but all are terrible when compared to it. Also, it's a seinen, so there won't be characters surviving 5 minutes of bleeding their insides out. Try Durarara. The characters are entertaining, it's got mystery, gangs, mythical creatures of the night, feuding superhumans, a black Russian guy who sells sushi when he's not kicking ass, and a touch of romance here and there. That said, if you're looking for something unique, I'd highly recommend Spice & Wolf. It's a fantasy, but differs from tradition in that it focuses on economics and trading rather than sword and sorcery. Still, the characters are generally likeable, and the banter between the two main characters never ceases to amuse. If you decide to give it a go, I'd urge you to watch five episodes. If you don't like it after that, odds are good you aren't going to.
