In the case of 360 games, installing them to a hard drive will never interfere with saves from before installation.
I agree, just I had a really frustrating session this afternoon. Everything that can go wrong in a Fallout game did at some point, with the load times on top of that. Turning off the Box or clearing your cache helps though. New Vegas is hands down my favorite Fallout game of all time atm.
