I only ever made single piece figurines myself, but I bet with practice you could carve ball joints that pop together (like a the pelvis-femur connection on a skeleton). Although they would be pretty flexible action figures.

I don't have a "Favourite car to work on" persay, as the enjoyability itself comes from a variety of different things, ease of access, or a roomy engine compartment, are usually plusses there, as I don't tend to have a garage to work in or a hoist to pull the engine out entirely, so those are plusses...
