If you have piles of money, you can get Grim Fandango for £60, fortunately, I have a copy that my older brother bought years ago. Fantastic game.

1. System Shock 2 (Good luck)
2. Planescape Torment
3. Deus Ex
4. STALKER
5. Vampire the Masquerade: Bloodlines

They're all PC exclusive, except Deus Ex may have had a PS2 port. Arcanum's good too, but I doubt you'll be able to find it. If you like Fallout, try Tactics, since that turn-based shit sucks all the excitement out of the game. And you already know 1+2's story if you've been paying attention to the new Fallouts.

Diablo II, TF2, and if you're looking for a free MMO, Dungeons and Dragons Online. And yes, Deus Ex. If you're in the mood for something simpler, grab DOOM 2, or for a more complex story, grab the Marathon trilogy (which is free).

Go to GoG.com and buy Baldur's Gate 1+2, Planescape: Torment, Icewind Dale 1+2, and Neverwinter Nights.

All are about $10, and optimized for current operating systems.
And Might And Magic...best deal of your life.

Edit: Also Betrayal at Krondor.

Thief series - 12 years old now, but worth getting to run!
STALKER series
FEAR series
Metro2033 - worth playing for the atmosphere and story
Descent series - bad-ass with two joysticks!

awesome, but overlooked RTSes:
Dungeon Keeper 1, 2
Populous: The Beginning
Black & White 1, 2
Homeworld 1, 2
Dark Reign 1, 2

Hitman: Codename 47
Crusader: No Remorse; No Regret
Jagged Alliance 1, 2
Tribes
Mechwarrior 4

Baldur's Gate
Icewind Dale

Damn, I could probably keep going :p

Good suggestions so far and many of mine have been taken.
Sooooo...
Jagged Alliance 2, don't worry about picking up a sequel you won't miss much.
and
The Operative: No One Lives Forever and No One Lives Forever 2: A Spy in H.A.R.Ms Way. The game that six months after Half-Life release out Half-Lifed Half-Life. Funny and smart with engaging characters and a goofy sixties spy story. Bugger if I know where you would find them though. I guess you could try an online auction site?

Half-Life 2.
The Unreal Tournament series.
Drawn: The Painted Tower (Probably my favourite Point'n'Clicker :p)
Saira (Neat platformer. The graphics <33)
Zeno Clash (really awesome Brawler game)
Amnesia: The Dark Descent
Defence Grid: The awakening (TD game)
The Elder Scrolls series
Torchlight

That should cover things nicely. :p

Team Fortress 2, Mount & Blade: Warband and Battlefield 2 are all fantastically designed time-consuming games. As a bonus, even if your PC isn't that powerful, you can still run all of them with ease.
