Definitely Telekinesis 3. Why drive on highways when I can lift my car in the air with me in it?
My second-most-coveted Plasmid is the Houdini from BS2 Multiplayer. It lets you turn invisible for a short while, and those girls' bathrooms aren't gonna peek into themselves ;3

Considering that there was not ONE dead body in Rapture that was not burned to fine crisp by the end of my play-through, I'm going to go with Incinerate.

Telekinesis would be the most practical and usable on a day to day basis. Plus it would be quite helpful... it would be my first choice.
Although I'm tempted to pick the insect swarm one just to release them and have them swarm around me, so I can run around screaming "I'm covered in bees!".
