So just a quick question for you guys. I decided to have a BBQ tonight so I went out and bought a basic coal one. Personally I prefer a cheap BBQ because its just a container for your coal and a grill rack. Im not really a big fan of a big gas BBQ as out the fun part of BBQing. I personally think the coal (and/or wood if available) adds so much flavour as opposed to using gas

As a side note. Is there such thing as BBQ weather or can you BBQ in any weather

First of all, you're grilling. Not barbequing.
Second, you use a wood fire to get a smokey flavor to the meat. They type of wood varies by region.

For home BBQs gas, it's so much easier and lasts longer.
You can buy a BBQ in any weather I guess but good luck finding a shop that stocks them in the midwinter.

Do you use solely wood or do you add it too your coal?

Whats the difference between grilling and BBQing?

When barbequing, wood. Always wood. Only wood.

Did you not see the video? Barbeque = low temperature, long time. Grill = high temperature, short time.

Barbequing is not something you decide to do tonight, it's something you decide to do next week.

Asados (Spanish for BBQs) are an almost religious tradition in Argentina. Grilling is basically cheating, so I'm a little biased with my preference. For BBQing I use a very rigurous structure of a few curled up newspaper balls, with a little wooden hut built on top. The newspaper is there to ease the transition of the fire and give the wood enough time to catch it. Once the wooden layer is healthily aflame, you drop coals on it and let them burn for 30 or 40 minutes. After that time has passed, you separate whatever's left burning from the embers, spreading the embers under the grill while isolating the fire to a side. Once the embers have warmed the grill it's time to put the meat on top. From hereon it basically depends what kind of meat you're cooking. The important thing is to keep the fire burning to one side and migrating a steady supply of embers every now and then.
