I play games on the hardest difficulty available. This is primarily because i am an achievement hunter, and a considerable amount of achievements are difficulty based. Since i generally have to play on the hardest setting anyway to unlock those achievements, it's become habit to just select the hardest difficulty from the get-go whether or not the game in question has difficulty specific achievements. I do, however, enjoy a challenge and i select the hardest difficulty not just out of habit - but out of a personal desire to experience the greatest challenge that the AI can give me. My love of a good challenge is also why i play Demon's Souls to this day and keep it online so black phantoms can invade. Contrary to most 'gamerscore whores', i don't play easy games for easy points. My 89k comes from (for the most part) tough, challenging games. I like to think of my gamerscore as a testament to my dedication for "perfecting hardcore titles" (though i certainly don't think any less of people who choose to play on easier settings out of choice or people who farm gamerscore on easy games)
