If games are art - and I believe they are - and a visual medium, then of course I am goign to care about their presentation.
Resorting to the most cliche'd art example, I'd much rather have a very-high detail print of the Mona Lisa than some grainy Xerox black-and-white copy.

Old games, I don't obsess over "bad" graphics, it's all a matter of what is best for the particular game's ART! Doom was designed from the ground up with sprites in mind, with low resolution in mind, the game design from the tiniest to the broadest detail caters for that. With Doom 64 when the engine got a significant detail upgrade the entire pacing of the game changed, away from rock-music backed shooty fun, to a more horror and suspense theme.
When you change a game's graphics, even to improve, everything else has to change with it to fit that.
I highly disapprove of the tinkering with the textures of Perfect Dark's XBLA re-release, it added more realistic detail but spoiled the original slightly stylised artwork. Plus it made the cutscenes ridiculous as while it's ok for a low-poly model to have still lips, it looks creepy with high detail faces. No, they should have just sharpened the textures and maxed out Resolution and AA, keeping the essential art unchanged.
HD re-releases like God of War Collection are much more like it. Resolution and framerate to let the games reach their potential.
What I am miffed about are games like Halo Reach and Uncharted 2 in such paltry resolution, they should be in 1080p native rather than 720p, I play them on my 1080p monitor from only 3 feet away it is just blurry letting down the detail of the worlds. Most modern console games would benefit from a Full-HD upgrade which currently is only possible with a quality PC port.
Other games (mainly multi-plat) clearly aimed very high in terms of the detail of the art world, but when it came time to deliver the code the hardware couldn't take it. Enslaved is one of those games, clearly so much effort taken with the world they created, but it is let down by Aliasing, Texture-blur and short render distance. I don't think in this case it would have to change, I see failed potential here and in so many other games, mainly based around Epic's Unreal 3 engine.
