Tekken 3 for playstation 2.. Never really gotten into any other fighting games since then..
Spend an ungodly amount on hours on that game though..

King of Fighters. King of Fighters XI beats the pants of just about every other fighting game I've played, except possibly GGXX: Accent Core and Soul Caliber (DC).
Tekken 3 was a big game in my house back in the day. i can't deny Street Fighter's brilliance, though.
I liked the soul calibur series the most, mainly the second one which i remember playing for hours on end on my GC.
Just got the new Street Fighter, and there are some seriously Over-powered characters in that game.
Namely Abel and C.Viper.

Smash Bros (but not Brawl)
Easy to pick up and play, simple controls, near infinite depth, massive customisation/fight modifier options and button mashers cannot win, EVER!
The ability to take a step back and throw something at a button masher makes it better then all other fighting games (in my not so humble opinion).

Soul Calibre 2 is the best fighter I have come accross. Many ours spent Voldo vs Sophitia blocking the hell out of each other in symphony. Tecken 2 gets a shout out but Soul was just so much more fluid.
EDIT: Special shout out to Killer Instinct on the SNES, I play that with mates for the win, the Glacious win!

I'm a bit of a fighting game novice, and so want to spend more time seeing if I can get good at Street Fighter, but right now, my favourite franchise is Soul Calibur. I loved 2, and I'm loving 4, especially the beautiful graphics, strong fighting system and deep character creation. Also love the characters. Except the Star Wars dudes.
That's, uh, interesting since C.Viper doesn't do much damage at all unless you use her long combos and Abel can be hit with all sorts of combos that wouldn't hit anyone else (bar Seth) due to how big he is (for example, Fei Long can score an infinite just by cancelling his fierce into his spin kick over and over again... but only on Seth and Abel).Sion_Barzahd said:

With the AI, they're pulling off various technical moves before i can even stand. So yeah C.Viper is a pain in the ass.
I absolutely adore Street Fighter (I only really played the first though), Soul Calibur (1 + 2) and Mortal Kombat. But I HAVE to vote for Smash Bros. I love them all and would defend their greatness to the ends of the earth.

Hell I'll have to go for Smash Bros or tekken, but I'll go for street fighter, because, well, it's street fighter!
(2nd) But Smash Bros is practically on top of it. Gotta pick what you're good at, right?
(3rd) KOF, King, Terry Bogard, Vanessa. My best team, nay, THE best team.
(4th) Soul Calibur has to take 4th, because SC2 is easily one of the best fighters I have ever played, and unfortunately Namco haven't been able to get it right since then.
(5th) And Finally, Tekken 5th, and Tekken 5 was just amazing, and the best tekken in my honest opinion. My firm favourite was Asuka Kazama, then Steve Fox, but I always thought Steve was almost too good...without being a 'noob' character like Hworang.

On this list, I'd say Marvel vs. Capcom, but I always had a soft spot for Super Animal Wars (Bloody Roar).
