I suggest the 4, 5, 6, 1, 2, 3 route. Beside watching it in numerical will ruin the element of surpise when it's reveal that Darth Vader is Luke father unless she knows that already.

Yeah, I say watch them in the order they were released. Now, personally, I enjoyed the prequels. My biggest complaint is that Anakin became an annoying whinny emo as the movies went on. He annoyed me. Other than that, I enjoyed them. So, I'd say you should warn her about the kid who played him (terrible actor) and his emo phase, and watch them all.
I would say in order, because it makes chronological sense.
But beware, I did this with my girlfriend, and she (I'm sorry everybody, but I tried) lost interest in 4,5 and 6, just because it was such a slowdown after 1,2 and 3. The prequels were instant gratification movies, the originals had depth and were the basis of an entire culture...but if you're a girl and haven't seen them before you may just fall asleep before the first AT-AT falls.....

Never seen 4,5 and 6 but I voted 4,5,6,1,2,3 for the simple reason that having to appreciate seventies CGI after having seen second millenium CGI in the same movie sequence is not pleasant.
I saw them for the first time like 2 years ago, and I watched them 1-6 in that order. Its not bad, plus unless your friend is really young or hiding under a rock the whole Darth Vader being luke's father has been spoiled a long time ago.
Show her the original trilogy first that way her view is untainted and she can enjoy the creations of George Lucas to the fullest degree. Then you can show her the spawns of nega-Lucas and maybe she will just focus on how everything fits together with original trilogy and not notice its... lackluster performance

Presumably she knows that Darth Vader is Anakin's father, but still watch 4-5-6 first, because you slowly discover the import of events that way. I don't hate 1-2-3, unlike so many others, but it might as well be a different series, for all the similarity between the two. Anyway, there's a lot of development in 4-5-6 that'll be wasted if she sees 1-2-3 first. Also, might as well show her the fun stuff first, so as to get her interested.
It's the fact that the entire ending was way too happy on it's own terms, even ignoring the fact they the Empire still exists and a power vacuum has been created that will throw the galaxy into chaos for years. OT, I'd say watch them in the order of release. They have a better flow that way since that's how everyone was supposed to see them, and you get to start and end on a high note (IV and III respectively).

If they watch 1, 2, 3, 4, 5 6 they'll go into 4 expecting completely the wrong thing and it might ruin it for them (and they genuinely might not make it that far. Tried watching 3 recently, suppose to be the better of the prequels; couldn't do it).

I am going to echo the sentiment of several other posters. 4,5,6. Then tell her that 1-2-3 were never really made. If she has to watch them 1-2-3, have her watch the summary/review videos by Mr. Plinkett over at red letter media.

All the people saying to just ignore the Prequels are just raging about the fact they weren't the target for those movies or they thought they were. It was to revitalize the series and it did just that and the preteens and kids loved it and they also love the Clone Wars series and it doesn't matter what we think about it because we aren't nearly worth as much money as massive amounts of kids wanting Star Wars this and Star Wars that.
That being said, the Blu Ray series should be watched from 1 - 6 in Chronological Order.
They are good movies if you give them a chance, but those that rant against it just don't like particular parts or the actors, but Lucas wanted those and it is his to do what he will with it.
