The reason I mentioned this one is because other people were already discussing it and I had some in-put to give on a topic I have studied significantly.

I like my steak medium. I want it to be cooked, but have a nice juicy pink center. I can go to medium rare (if a cook refuses to cook more than that), but medium I find to be a good middle ground for safety and juicy taste.

Burgers, though, I want well done. I'm generally using ground beef or ground chuck for burgers and that is much riskier for your health. I still want them juicy, but a good cook can manage.

Pretty much any other meat I want to be cooked through, too. Pork loin, chicken, what have you.

I seriously need to learn to grill like my dad does. His burgers are the best you can ever have. He is the Grill Master.

I strongly prefer medium rare but I don't mind rare and I accept that hamburgers (supposedly) need to be cooked to medium which I'm also fine with. I'm really not too fussy when it comes to rarity but I don't like eating burned meat. There are some people who are really paranoid about eating their meat 'raw' or bloody or what have you but there's something about burning meat down to a crispy puck that just seems wrong.

Had a burger last night. Wasn't cooked well at all. Didn't enjoy it. Bummed.

Maybe it's boring, but I like "medium". Raw enough to still be tasty, cooked enough to be safe to eat...

Depends on the kind of meat and of its quality.

Porc, veal and all manner of poultry, I prefer medium well to well done. Except bacon, which I like crispy for certain dishes.

Beef I like medium well for burgers and medium for steak, although I will sometimes take that down to medium rare when I'm absolutely sure it's an especially choice cut.

Rare for steak, bison, lamb, etc.

Medium Well for burgers (you can get sick if they're too rare)

Raw for fish if its safe.

Aside from that, most other meats (pork, poultry, freshwater fish) can make you sick if you eat them undercooked.

Despite what people may think, eating undercooked or even raw beef is totally ok; the reason why you have to cook ground beef more (and sear the outside of your steak) is because of anything it may have touched after leaving the cow. A lot of saltwater fish are similarly safe to eat raw provided it was properly flash-frozen, especially tuna which the FDA even admitts doesn't need to be frozen because the odds of finding a parasite in Tuna is astronomically rare (though most fish suppliers freeeze them anyway).

Sadly, other animals, like the aforementioned Pork and Freshwater Fish, are much more likely to have parasites and poultry of course have bacteria .

OT: For the sake of argument, I like my steaks medium rare. Pink and juicy in the middle, brown on the outside, melt in your mouth tender. Yes it depends on the type of meat and the cut, but if I'm asked and I'm unsure (or I'm too drunk to think straight) my default answer is medium rare.

And for whoever was asking about kangaroo earlier, it's delicious. Very tender meat, but seriously don't overcook it. I actually make enchiladas using roo mince now instead of beef mince because I find it tastier (but I live in Australia where it's really easy to find at the supermarket).

Even "Well done" isn't really 'cooked', it's just seared so that the outside is crispy while the inside is still raw and bloody. Which has its merits I guess but I find it lazy and gross to be honest. Still yum every once in a while though.

'Cooked' is when every grain of meat in the portion is heated so that it melts in your mouth. That's how us Mediterraneans cook meat. Now THAT'S an art.

Well done means no pink inside or out. Though I feel most people who don't enjoy well done don't know what well done is, cause I tire of ordering well done and still getting pink in the middle. My most recent burger did it and it was disgusting (to me), cause I could taste it.

Blue - Outside browned, inside is completely raw. Can barely see anything cooked in cross section.

Rare - Outside browned/seared, inside slightly pink, still mostly raw. All three stages of cooking visible in cross section.

Medium Rare - Rare, but less so. About 50% raw.

Medium - All meat cooked, inside still pink.

Medium Well - All meat cooked, slight hint of pinkness.

Well Done - Brown through and through.

This really depends on the meat and how I'm eating it.

If it is beef for hamburgers or hot dogs, then I want it well done.

If it is beef for steak, then medium well.

If it is bison, then medium or medium rare. I haven't had Elk, but I hear it is in the same category.

Everything else, I just don't think much about. I guess I just go for whatever is standard for that food.

Again, these are all only relevant to STEAKS, not meat in general. "Well done" in steaks is still mostly undercooked because the meat is still chewy as f*ck. Cooking beef in a grill or a pressure cooker...now THAT'S cooking it because that's when it just melts in your mouth.
