Cooks actually love to make steak. The problem is that most people ask for something they don't want and upon receiving it, send it back to be cooked longer. So when people ask for rare, cook it to medium. If folk ask for medium, cook it to medium well.

Unfortunately, this makes a good blue rare difficult to find as I'm not very well going to send back a steak because it was well done(Unless it's charred). It's one of those "we're jaded" things. I had some guy ask for rare, so I sent him out rare. Sure enough, waitress comes back and the guy had the gall to tell me it was blue rare.

If it's germs, though, I once knew a manager who sealed cuts on the grill where he cooked the steak so you're perfectly justified if you assume the habits in the kitchen are iffy.

I love the hospitality industry.

Yea, its mostly about the germs. I figure, if I order medium it will be on the grill longer and that decreases the chances of any germs actually being left. The other reason is I have had more cases where the opposite of what you suggested (with cooking it longer then they order) happened. I ordered Medium-rare and got rare or even blue rare. The way I see it, if I order Medium they will have to get it completely wrong for it to be ruined.
I don't think you'd be surprised to know how many cooks don't know the difference between medium and well done. I think it has to do with personal taste, too. With so many ways to have the steak(Blue rare, rare, Medium-rare,medium, medium-well, well done, charred) the lines get blurry. I think you're safe with medium, though. It's one of those relief orders. You know the person who orders medium-rare is going to be rather choosy.

Oh, for fucks sake!

Since it appears that some of you have no clue as to what the meaning behind the words are. . .

Raw-Go out into a field, kill a cow, grab knife, eat.

Very Rare- Doesn't exist, or is a matter of opinion, although more likely considered to be . .

Rare- Comletely red, may or may not be warm, essentially raw.

Medium Rare- 90% red, warm, may be lightly browned on the outside- My favorite.

Medium- Browned outside, center is pink, warm.

Medium Well Done- Again, bullshit catagory that doesn't really exist, is most likely either an overdone Medium, or an underdone Well.

Well Done- No pink, is completely cooked all the way through.

Overcooked- *sigh* again, a bullshit catagory. Burnt food is not a variation of style or method of cooking, although some people may prefer their steak overcooked, these people are morons, and could not tell the difference between food and a charred piece of coal.

On a side note, I realize that some of you may have heard the bullshit terms before, these are only used by incompetents, or a snob restuarant manager who serves incompetents. The bullshit catatgories are only extreme versions of the actual methods of preparation, and are only named so as to allow idiots to think they are particullarly intelligent for being picky enough to order a "special" method of cooking.

In example, some idiot walks into a restuarant and demands his steak is made Raw. The restuarant staff interprets this as, " This idiot wants a rare steak, with emphasis on the rare part". There is no "Raw", there is only "particullarly Rare".

I don't think I've ever had steak. It kinda looks disgusting anyway so i don't have the desire to try it anyway.

I used to take my steaks rare, but I had to stop after I came down with a case of salmonella once.

I find this entire thread a little amusing. Where do you guys live that there's no standard of cooking steak? Medium well doesn't exist? Blue rare and rare are the same thing? Taste is subjective, cooking itself isn't. Hah.

At any rate, it depends on the cut of steak but most of the time I like mine plain medium.

It depends on the restaurant, typically medium is what I end up getting. I'll eat any steak if it's between rare and medium, but I don't like my steaks well done. It takes away all of the flavor and tenderness.

Medium for me, delicious. I... I've worked in kitchens and have seen what happens when someone orders "Well Done".
I've had rarer steaks - they were less tasty. And quite frankly, really rare steaks are disgusting.
I'm just not a huge fan of steak.

Medium-rare, but closer to the rare side. I don't mind if my steak is a little bit under-cooked

I like mine well done. A friend eats his so rare that its still bleeding, then he dips the steak in the blood.
